Why do we add milk to scrambled eggs? I just do it because that's how I was taught to make them, but it occured to recently to wonder why?

But you don't NEED to add milk, and when you do, the eggs get all fluffy, so I honestly think it's less about bonding (egg is always the ingredient used to bond things, i.e., meatloaf) than it is about fluffiness.Originally Posted by lookingglass

Okay I feel silly posting that because it's really the fat in the milk that is doing the job. It helps make things fluffy. The best way to make them is to use real butter and cream. That's the way my Momma makes them.Originally Posted by lookingglass
