I have read that the vet will do a Schirmer tear test strip. I’m pretty sure I can look at him and see that his eyes are dry and the whites of his eyes are slightly red. I am certain he doesn’t have feline herpes, he’s been tested and since then he hasn’t been in contact with other animals besides my dog. Are there some sort of eye drops I can try before putting him through the stress of a vet appt?

And there are several causes for dry eyes, some of which are serious and can ultimately end in blindness if not treated. Granted, cats can adjust to blindness and live very happy lives, but I wouldn't chance it.
