Does IBD always lead to lymphoma? Has anyone had any experience with a cat who was diagnosed with IBD but it never turned into lymphoma?

The very short answer is that inflammatory conditions can lead to cancer. That does not mean that it has to, or that it will happen to your cat.

No, it doesn’t. It can, if left untreated become lymphoma due to the constant inflammation. Inflammation can lead to cancer. If treated the gut is no longer inflamed.

IBD doesn't have to become lymphoma. I've had an IBD cat that never got lymphoma, and I've had a lymphoma cat that never had IBD.
