I just adopted this 5 month old male kitten. I assume part Siamese or Himalayan; any thoughts?

What a beautiful cat! Definitely a colorpoint, in a lynx pattern (which means you can see the tabby markings). The colorpoint pattern is not rare in cats. Many breeds are colorpointed, like the Himalayan and Siamese you mentioned (and other breeds too, like Ragdolls). Her coat seems fluffy, but that could be a mix with a longhair, or possibly Ragdoll or similar.
