I agree WITH @Kieka about the point that the best diet is what you can afford that your cat will eat. I have two VERY picky eaters. I have thrown away more cans of high quality, premium foods than I care to think about. They refused to eat them. The best foods are useless if they end up in the trash. If you are looking for a good, high quality dry food that is high protein and low carb, I suggest Dr. Elsey's. You can request samples from their website. They also have canned foods that are all pates. My picky eaters love the dry but are not fans of the wet from Dr. Elsey's.

A small amount of grains is okay, like rice, because it helps settle the stomach. But just a little bit. The main thing should be meat, not grains. So grain-free is preferable.
