You used self-rising flour AND baking powder? No wonder your cookies grew so big!!
Self-rising powder basically takes the place of the baking powder - that's why you never had problems before but did this time. You had a double dose of grow in there!

I didn't think about that
It all makes so much more sense now

and parchment paper would help wil the sticking part ...... I bet they were good anyway.

Finally made my way back here, and I want to reiterate the parchment recommendation! Nothing sticks, and there's nothing to clean up! Woohoo!
