Barley In Cat's Homemade Food?

I'm using Balanceit to generate recipes for my CKD cat (he has CKD, so not having a carbohydrate source is out of the question). The problem is finding a carbohydrate source that is least harmful to him. Rice has high arsenic levels, potatoes have high oxalate levels... I eventually zoomed in on barley, which is very low GI, but it has gluten. Is it OK to feed cats food containing gluten?

I read somewhere cats do better with whole grains.
