Ash In Dry Food?

If the ash content doesnt appear on the bag, does it affect the carb calculation?

Yes it does, unfortunately not all companies list it on the bags. I would use an average amount for calculations if you don't know. I'm not sure what the average ash is in dry food though, I only feed wet now.
