I am looking for alternatives to rabbit meat because I am seeing that rabbit is extremely expensive right now everywhere. 15/pound for boneless at Hare Today. Normally quail is even more expensive but I'm seeing some Texas quail at the Central Market for 4.99/pound for semi boneless quail! I'm thinking of picking some up and trying it out for my cats! Bf may want some too lol. On HT semi boneless quail is listed as having 10% bone. I'm thinking if I remove one of the leg bones I will come down to 7.5%. I normally achieve this through half boneless rabbit and half bone in rabbit grind. Or I can even use the quail meat and chop off the limbs to use for the boneless part of my recipe. That would certainly make things easier while still using a novel protein besides chicken and turkey. Anyone have any thoughts or experiences with quail?
