They are good with peanut butter & jelly on them too, but they taste like shredded wheat cereal. :lol:
LOL. Maybe they need milk and sugar then. :lol:
I'll have to try them with peanut butter and jelly though.

Didn't actually have my Triscuits and carrots and hummus for lunch, as my carrots were getting "fuzzy". :oops: So they ended up in the green bin. :( Worked out ok, though, as I had an avocado that was ripe, so I ended up using half and having avocado toast.

For dinner I had soup and a piece of cornbread, and a small gala apple.

When you only use half of a avocado what did you do with the other half? I always ate the whole thing because I did not want it to go bad. What goes on avocado toast besides avocado?

Last night the only thing I could pick was cottege cheese and fruit (cantaloupe & honeydew melon). I did not want the fruit because cantaloupe interfers with my IBS-D so I asked for cottege chesse and a side salad. Instead they me the fruit and no salad. At least it was better than it has been. I ate a litle bit of the fruit.

Tonight they gave me two large portions of cheese manicotti, a salad and a roll. The manicotti was delicious. It taste like it came from The Olive Garden.

Thank GOD, you finally got fed! I can't tell you how relieved I am. It sounds like a very satisfactory dinner, so now we know that they CAN do it, they just DON'T. Rat-finks.

Tonight? Hotdogs. With cheese. And onions.

Not all of them. It looks like they have a vegetarian line, but mine was with actual meat.

So my Ben and Jerry's mint chocolate cookie ice cream made with sunflower milk is pretty good. I also got a peanut butter half baked made with almond milk.

Yeah, its hit or miss around here. Tonight they are having egg rolls and fried rice. I would love to have them but I'm sure there will contain meat and eggs. I have not had Chinese food in over a year.

My brother is going to order some plant based multi vitamins and some protein tablets.

I quickly put the 2nd half in a container and put it in the fridge. I leave the skin on, and don't remove the pit, so that there's less areas to go brown. Then I use it the 2nd day, and just scrape off the brown parts. I've read that brushing lemon juice on the edges will delay browning, but I haven't tried that yet.

There's tons of elaborate ways to make avocado toast, but usually I just mash the avocado and just spread it on the toast. I have sliced the avocado and topped it with cheese, which I melt in the toaster oven. Another time I topped the mashed avocado with sliced strawberries. Today I may slice the avocado and make a sandwich with cheese, tomato and maybe a bit of onion.

Googling avocado toast will find tons of different variations. Here's one pic Google found:

They look pretty good. I would like it with just smashed avocado and salt and pepper or the mediterranean style. It's funny but I like chickpeas but not hummus.

I definitely need to cook the pork tenderloin today. I did not feel like cooking it yesterday.
I did bake a sweet potato; so, all I have to do is decide on veggie....

Yesterday, I saw a video clip from Jacques Pepin; who was auspiciously cooking a port tenderloin..
He cut it into 4ths.. kind of mooshed down the pieces, pan frying for 3-4 minutes each side.. It looks so good, and easy..

I think I will try that method for this tenderloin.. kind of like a pork steak....

Of course he added a sauce with it.. some onion, V8 juice, a bit of water to deglaze the pan... but easy...I think there was another ingredient.. but it looked really good.

M maggiedemi You could probably make it from a regular recipe, but omit the pork? I always use lots of peppers and water chestnuts. You could also add sliced carrots, I'm thinking, as well as extra pineapple. What about subbing tofu for the pork? I don't care for tofu, but a lot of people like it.

artiemom artiemom You were talking about Easter dinner. Last month when we were grocery shopping, our store had spiral hams for a very good price. I bought two and we'll have one for our Easter dinner. The other will work for later on this summer. As for your pork roast, great minds think alike!!

Tonight I think we'll have tuna melts. And maybe a few French fries. Or cole slaw. Yeah, cole slaw instead of the fries. Or, maybe in addition to. Yeah, that works.

It took me a while to find a brand of hummus I liked. I also discovered I prefer it plain, and not garlic, or other flavoured.

Not sure what's for dinner tonight. Possibly rotini and broccoli, with jarred tomato pasta sauce. 🥦 🍅

Your lunch sure looks good.

The avocado looks good for being cut 24 hours ago.

I used to like hummus but I ate so much of it when I was vegan I can barely stand the sight of it. I used to like it with garlic and red peppers.

I've never heard of that. I wonder if they sell it in cartons. I love sampling new milks.

I use Deva multi. I never heard of protein tablets. I use Now Foods for Calcium/Magnesium tablets. That's all I take.

What about subbing tofu for the pork?
Thanks for the ideas. I tried a marinated tofu from Aldi that was amazing, but they never had it again.

Breakfast: Finished up the Bakery on Main apple walnut granola with 1/3 cup 2% cow milk. It wasn't really granola, it was grain-free, so they used bean crisp flakes instead of oat clusters. I don't really like flake cereal anymore unless it has nut butter in it.

Lunch: Veggie sammich on Aldi brioche bagel toasted, 2TB mayo, 1/2TB El Yucateco green habanero hot sauce, Aldi swiss cheese block sliced, tomato, onion, mixed greens, diced Pinata apple, slivered almonds. I prefer sliced almonds over slivered, these are too tiny and stick in my teeth.

Dinner: Leftover spaghetti cake casserole. I added a diced Aldi veggie burger, canned mushrooms, 1 pinch spicy fire salt, 1/2TB El Yucateco green habanero hot sauce, 1/2TB mustard, and microwaved it. Yum! I joined a mustard page on Facebook and they put mustard in everything, even pasta, so I tried it. It was great. This is my new mustard:
