A massive schnitzel almost the size of the plate, mashed potatoes and a tomato/cucumber salad. It was so big I only ate half and brought the rest home.
Leftovers from yesterday. You know, when I made the pineapple stuffing, I doubled the batch and it went into a 9 x 13-inch pan instead of a 9-inch square pan. I though that would give Dear Richard plenty of leftovers for his lunch as he dearly loves this pineapple stuffing. I thought it would make a nice change from applesauce or peaches that he normally takes in his lunch. Well! There's enough pineapple stuffing leftover for his lunch today and that's it! I was amazed at how fast that casserole emptied. And I thought my brother was going to lick the casserole dish clean.
We have some slices of ham (most of it went into the freezer, including the ham broth and ham bone for split pea soup) and a little of the potatoes. Some dried corn and a couple pickled eggs. So we have plenty for dinner tonight yet and then that will be it.
