I haven't posted in here for a while.

Saturday night, I tried coconut shrimp in the NFG on AC. It was really good. Dip the shrimp into seasoned flour, then beaten eggs and milk, then panko with sweetened coconut. Yum! Rick even ate quite a few; I was surprised. We had it with sauteed asparagus with lemon-pepper. Definitely make again.
Sunday with the kids...I made macaroni salad and Rick grilled some beef pucks. Dessert was a chocolate cake with PB frosting. And the kids brought a coconut cake for me.
Tonight's dinner will be sloppy Joes, a seven-layer salad, and doctored Bush's baked beans.

We met friends for brunch yesterday. We hadn't seen them in quite awhile so we talked for a long time. The portions were generous and the food was pretty good so I took half of my veggie omelette home for dinner. DH got a skillet but finished it all there.

I texted DH this morning when he was at the gym asking if I should take chicken out tonight for him but he said he never got my text. When I got home I made him double check his phone and guess what he found? :crackup: I'm making butternut squash ravioli with salad instead. Raspberries for dessert.

Let's see...lunch will be taquitos. Dinner will be pork patties, and two veggies, but I haven't chosen them yet. LOL, inventoried my pantry, and there are plenty of veggies to institute my new eating pattern now! but I do have to re-work my grocery list!

Went to town today for haircuts (happy happy joy joy!)Had to stop at WalMart for a script and a couple of things.They had just put out fresh rotisserie chicken,so I got a traditional for a change,some cole slaw...hubby wanted potato chips...and that was dinner.So good!

I took two chicken breasts out of the freezer last night to thaw in the fridge. Not quite sure what I want to do with them, but thinking about using a balsamic glaze and grilling them outside. We are supposed to get t-storms this afternoon, so I may end up using the NFG.

We went to Springfield for his appointment and stopped to eat on our way home,so late lunch.Neither of us were hungry so he took a nap,I did a load of wash and made myself so rice.He wanted a slice of pizza,and that was that.Appointment went well,did some tests on the pacemaker that were all good and he goes back in September.Frustrating we couldn't get an answer of a release date to proceed with the hip.I will work on that for sure.

Oh yum, lizzie lizzie , that sounds wonderful! I read that you can reduce the potassium in potatoes quite a bit by soaking them in cold water for an hour or so, rinsing well, then cooking. I’m going to read a little more; if I think it might be ok, I’m making potato salad on Monday.
You may very well be right there.I know when you can fresh potatoes,they have you to soak them to help remove the excess starch...keeps the water from becoming too cloudy...so maybe that's where the potassium is hiding!I did use mayo though,and zucchini relish.

lizzie lizzie Well, I was wrong. It's not soaking the raw potato, rather it's double boiling the potato.

"Results show that potato soaking was ineffective for fresh raw potato, while normal cooking achieved insufficient reduction of potassium. However, when a soaking procedure was applied after normal cooking, it was found to be possible to leach up to 70% of the potassium, to final values of under 130 mg/100 g edible portion in both cut types studied."

So it's kind of a pain in the butt to do, but worth it. I'm still not going to include a lot of potatoes in my new diet, but I am going to try this for potato salad (along with my low-sodium (LS) mayo and mustard. I will use zucchini relish, just cut back.

Anyway, tonight's dinner will be grilled pork chops with a bit of salad on the side.

Not sure about tonight. My lupus is kicking up, so something VERY simple. I'll play it by ear. Probably taquitos for lunch, and I may just have a hamburger for dinner. I have a bag of precooked patties that can be microwaved, so I only have to stand up for about 3 minutes to get that ready. They aren't bad if you season them before microwaving. NOT nearly as good as fresh, but edible.
