That's a cute kitty! He could be considered a Norwegian Forest Cat lookalike, with his long fur and triangular head. It's impossible to tell for sure if he has any NFC influence, short of a DNA test, so he would be called a red tabby (I'm not sure of what kind of tabby, can you post a side photo?) and white Domestic Longhair.

He does seem to have some variation in fur, so I'm thinking maybe classic tabby?

NFC influence but without paper he's technically just a domestic long hair. He is a red and white bi color, maybe tabby? Sometimes with reds the shading can be deceiving on patterns. If he is a tabby, he would be a red classic tabby with white.
