My favorite is a baked potato second would be mashed.

I like homefries with an omelet. That is something that is a breakfast meal but for me it would be dinner.

Mornings are too busy here. Plus I'm not a morning person at all. But a few times a year we'll go all out and make the works having "Brinner" on a Saturday evening. DH is always in charge of pancakes but I do home fries or hash browns, bacon, eggs, etc. I need to do that again soon. It's been a while!

Mashed..

• Steam until really soft
• mash well with butter..
• scoop to the side of the pot and add milk, salt and finely chopped parsley.
• Heat the milk until almost boiling then mix through the mash until creamy

I often have this topped with some lightly fried whiting fillets.
