C catapault I hope that is the case and the price does drop; it is very expensive. Nonetheless, with everything else going on (the rainforest problems, for example), I wonder how long the prices will stay lower. I read an article that said that chocolate may become something for only the very rich, largely due to problems with the beans. I think it may become more difficult to bake in time.

What is the best kind of vanilla? I was looking at different vanilla sugars and there was Madagascar, Bourbon, Tahitian....

M maggiedemi It really depends on what you like. I've tried to stay clear of Mexican vanilla because I've heard some scary stories about what they mix it with it to add to the vanilla in the bottle. Sometimes, depending on where you get it, it's not safe. I usually go with Madagascar, but that's just me. I have had Tahitian vanilla beans and they're very nice, too.
