Haven't checked the ingredients but the texture does seem a little different (it actually seems more uniform/processed). Could be coincidence since I haven't given them anything new in a while.
We've had a lot of success with Instinct, it's easy to find at most stores (independent stores, petsmart/petco, as well as online chewy/amazon). Currently feeding Instinct Ultimate Protein. You might be able to find trial bags (generally a $5 purchase with a $5 coupon toward a full size bag).
Noticed something similar, our cats don't like regular or raw boost, but scarf Ultimate Protein. They've had much fewer accidents (almost none) compared to when they were on Orijen (although there may be other factors causing this difference too).
We get UP at Amazon with S&S, knocks off about 15%, we also get the 10 lb bags. Locally, the trial bags have a $5 coupon on them that you can use at retailers.
I've never fed Regular Instinct but the ingredients seem great to me and the reviews are good.

Not really sure there's a best but many people regard Orijen highly. Our kittens like Nature's Variety Instinct Ultimate Protein. I consider both top tier.

In addition to a change of food, have you considered adding a pet fountain if you don't already have one? It can help encourage your kitties to drink more water.
Would suggest NV Ultimate Protein too. Our kittens are nuts for it, we use it as a treat in addition to their snacks between raw. They liked Orijen too.

A correction to what I said earlier:
The 'tracking' feature does work well and is quite useful. An 'almost empty' notification will popup on the phone it's synced to when food in the hopper drops below a certain amount (which seems to be a few feedings before empty).
I've fed both Orijen and NV UP and I think they're both excellent dry foods.
Our kittens preferred the taste of UP (they literally go nuts for it), it has fewer proteins (we have an IBS kitty), and seems to be more widely available.

Agree, some of the complaints seem exaggerated or just don't make sense. I should have read them more closely.
I think the skin issue might be unique to the rabbit/lamb flavor. It's pretty repulsive to me but the kittens don't seem to care. The canned lamb doesn't seem to have the same issue.
FWIW out kittens have been eaten the Rabbit/Lamb canned and Lamb dry.
We phased out the dry. No problems there, our kittens just stopped liking it and we didn't think it was a good value.
