I like to put food in "inconvenient" places where the cats never go except to get food, and just scatter food in the bottom of a pie plate to make it unappetizing.  I'm a dedicated free-feeder and so far this works to bring down my butterball's weight.

It sounds like you've really done your homework.  I'll just throw out three ideas on the off chance you haven't thought of them. 1. Dental problem?  Maybe you've had your kitty's teeth cleaned and examined/x-rayed, but maybe not.  Maybe his mouth hurts when he eats.   2. Food allergy?  One of...

If those drops are caused by a urinary tract infection, they should stop within a day or two of starting treatment with antibiotics.  If they're caused by something else, they'll continue.

That sounds so frustrating and stressful!  But take heart, these problems are totally solvable with changes to environment and kitty lifestyle.   My first recommendation is to sit down with your favorite snack or drink, and watch a few episodes of My Cat From Hell so you can be encouraged...
