It's already the end of July! Where is summer going!? We only have a few weeks before school starts here and suddenly I just want time to slow down a bit. But it's late Sunday night and that means I'm working up our menu for the week and my grocery order. Tacos have become a staple here because everyone eats them without complaint.
So tacos! Yay or nay? What do you put on your tacos? Crunchy or soft shells? No shell? What meat do you prefer? Or do you prefer meatless?
Normally I make beef tacos in soft tortillas with lettuce, tomato, pinto beans, shredded cheese (monterey jack, cheddar or a blend of some sort) and plain Greek yogurt. Oh and taco sauce. I like to use a lower sodium taco seasoning. It's always hard not to over-stuff the tortilla.
I will also use ground turkey or make them from chicken occasionally too. DH has been eating his more like a taco salad with tortilla chips and sometimes I do that also. He adds diced avocado when we have that too.
