    Oh yum, @lizzie, that sounds wonderful! I read that you can reduce the potassium in potatoes quite a bit by soaking them in cold water for an hour or so, rinsing well, then cooking. I’m going to read a little more; if I think it might be ok, I’m making potato salad on Monday.
