Your Favorite Way To Pan Fry Fish?

I've been experimenting and, frankly, the kitties like the results better than I do. (Big Boy got over his fear of non-kibble with a fish head last night.)

I've experimented with pan frying using various oils, including olive, safflower, etc., as well as various coverings, including bread crumbs, cornmeal, flour and cornstarch, and if anyone has a suggestion, I'll try it.

I'm looking for nice and crisp, avoiding too much oil.

Thoughts?

Medium heat, skin side down (if it's a filet that has skin) and its done when the cornmeal crust is just barely starting to become golden. You don't want to cook trout or any fish, too hot or too long.
If you're cooking with a whole fish, just flip it once and again, that cornmeal should be just starting to become light golden.
It won't take long. :)
