What's For Dinner? - 2024

Cleaning out prepared meals in the chest freezer. Kids will have bbq ribs and hubby and I will have chili. I’ll serve the kids ribs with boxed Mac and cheese (they won’t eat homemade) and steam in bag green beans. Hubby and I will have packaged frozen biscuits and salad with our chili.
I have a ginormous uncooked turkey I’ve been thawing since Saturday hopefully it will be thawed by tomorrow, if not def by Thursday.

I have no clue. Whatever it is will be FAST and dead EASY. I took a hard fall last night onto concrete, and EVERYTHING hurts today. LOL, most of it is also black and blue. Legs, right arm, right shoulder, right hip and butt. SO...possibly toaster waffles, two meals a day over the next day or two. It won't kill me.

He had a doctors appointment in Springfield today..released from the pacemaker surgeon and doesn't go back for a year...yay!...and we stopped at the DAV thrift store and bought 4 beautiful bath towels for $16,so dinner was easy...hot roast pork sandwiches and a small salad that we shared.

I'm sorry to hear about your fall last night especially on concrete - ouch! :stars: Can you take anything for the soreness? Please take care of yourself and keep us posted. Sending healing vibes and hope you feel better soon. :vibes::vibes::vibes:

I was starving by 4:30 p.m. so we had an early dinner - quinoa burgers w/swiss cheese, hummus and red pepper for DH, I had swiss cheese also but added avocado, zucchini, Roma tomato and spinach leaves to mine. Mocha chocolate chip yogurt bars for dessert.

Cut small pieces from a couple of thin slices of the steak from last Friday. Set aside
Cut some onion and sweet red pepper, started sauteing in oil.
Meanwhile boiling water for thin spaghetti
Break asparagus spears, discarding base and breaking remainder into three pieces

Spaghetti into boiling water, set timer.
Add meat into pan with onion & red pepper, turn heat down and put lid on
Two and a half minutes before spaghetti done add asparagus to boiling water
When done, drain, add meat, onion, red pepper and pan juices. Toss with spaghetti and asparagus.

Plate up and enjoy

I remembered to make bread and remembered to remind myself every few secs to look at the directions
So it came out very good! Olive oil rosemary parmesab bread
Can't share pics anymore unfortunately
Camera no longer works but at least I can swipe now!
Rosemary parmesan olive oil bread came out excellent!

I've been winging it because I have a case of vertigo
I can relate and I feel your pain since I have vertigo too. However, I went to physical therapy for it and it helped immensely. I don't get it very often anymore but every now and then it raises it's ugly head, (no pun intended). :biggrin:

I desperately need to go grocery shopping so not sure what I'll make for dinner. I don't even have eggs in the house. I may throw together another beet salad and call it a night. DH said he can have his last of the turkey burgers on a whole wheat roll w/swiss, hummus and tater tots - not too exciting but it's one of his favorite meals. Honeycrisp apple for dessert.
