How did you know that's exactly what he said, were you hiding in our kitchen? :lol: Yes, when I make my own pizza I not only choose the ingredients but use extra of everything especially oregano.
Because I know when you're used to the best at home ,sprinkled with TLC nothing compares!
Hubby has the best,forget trying the rest

I have leftover chicken tenders for DH so I'm making tacos for dinner tonight with chips and salsa. Veggie ones for me and I'll make guacamole too. Dark chocolate for both of us plus honeycrisp apple for dessert.

So the dinner menu has changed, lol. Since the temps dropped and became cooler we'll be having lentil vegetable soup with rotini pasta and salad. Dessert stays the same though.

Do not know what is for supper.. Yesterday, I Finally made my stovetop frittata! It was soooo good. I really enjoyed it. Had some of TJ's fall festival corn chips for dessert.

UGH... another meal of going out this week-end! I never thought I would be tired of it! A friend wants to go to the Mexican restaurant that myself and another friend discovered. UGH... and then, I think my snow-bird friend will be wanting to meet up at the local beach spot, tomorrow.... UGH..

Honestly, I do not think I have even been going out to eat, as much as I have, in the past 10 days...weird.

Spending too much money on restaurant food.. I cannot believe I have been going out almost every day for a week! ridiculous.. The weather has been gorgeous, so I guess: do it now, before the bitter cold comes in.

Next week is a busy week for me, with a doctors appointment, Covid vaccine appointment, and a couple of classes in the building.. may or may not go to them.. One is a painting class. The other is another cooking class. This time lentil salad...

If I am able to, I am going to make a batch of the egg salad, with caramelized Visalia onions and minced parsley--- so good.. tastes really good when warmed, with some crackers!!

Last night I had IKEA veggie balls with some french fries and cucumber. Kind of an odd combination, but I enjoyed it.

Tonight since I bought some hamburger buns, I think I’ll make up some black bean burgers.

Yes, it is a very old, traditional recipe in my mom's family. I think it came from the Depression or is a German/Polish take off of an Italian Frittata. No recipe, just something I grew up with. It is just sliced potatoes, with eggs. You can add onions, or what ever veggies you want to it. It is all done stove top, instead of in the oven.
It is a quick easy meal.
Just slice the potato, thicker than potato chip size, add oil to the pan, put slices in a layer or two.Cover and wait for the potatoes to soften-- not mashable stage, soften.. then crank heat up, to medium- high, to brown a bit. Keep turning potatoes over to get the crispiness you want. Take one or 2 eggs, break and scramble in a small cup, pour over potatoes. Turn chunks of potatoes and egg over to cook... Done... I grew up with my mom using corn oil. It seems to give this a nice flavor.
