What's For Dinner? - 2024

Did not sleep well, the night before; Yesterday began with an invite for coffee, outside, in the courtyard. The 3 of us were there, and then one guy came by to join us! It was gorgeous outside. We sat for about 2 hours.
One friend had a hair appointment, the other was just going shopping.. asked If I wanted to go-- so I did..
It was an adventure!!

Started off with a late lunch at a wonderful spot in Salem. We each got the quiche of the day; fresh tomato, basil, mozzarella. I got a side of corn salad: fresh corn, cut off the ear, a bit of red onion, avocado, halved cherry tomatoes, some minuscule sliced herbs.. delicious. My friend got the orzo salad with artichoke hearts..
So good and cheap!!

Went shopping, picked up a nice Fall themed fleece blanket/throw for $16!! a bargain! Then we went to the coffee shop as a 'treat'.. I got a green tea lemonade, and a chocolate chip cookie! My friend got a mocha/fudge latte with a coconut cookie.... All in all it was a very good day!!

Newspaper meeting today.....
may take another friend out to Trader Joes--- if not today, then tomorrow. She does not drive, and I promised her it would be this week....also talked to her about my favorite ice cream place....sigh...

Yesterday morning, I was planning on a short walk. I have done so, for the past couple days, but the hip and the knee were really talking to me.. so the shopping was good.. We did not overdue it.

The weather has been gorgeous, this week... no clouds in the sky, coolish.. slight breeze... awesome weather. taking advantage of it..

Yet again, I'm going to try to post here more often, as a motivator to cook more meals and eat better. Tonight is slow cooker lentil soup, probably with a few Triscuits, and an apple for dessert.

Love love lentils. I don't know why I never see more of them being used. A lot of cultures used them.

Can't remember what we had Monday or Tuesday but Wednesday DH was talked into buying a french bread pepperoni pizza from Aldi. He ran into a good friend there who swore it was wonderful but DH was disappointed. :disappointed: I made veggie fried rice with broccoli slaw, spinach, red pepper and falafel. Tonight DH asked for grilled cheese with curly fries. I think I'm making avocado toast with enough veggies to look like a salad on top. :biggrin: Honeycrisp apple for dessert.

Wow how things can turn around with a new day- such a lovely day,so glad you had a nice adventure in good company🥰

That's like when people recommend " great" Italian food at this or that restuarant- I won't even try it because no restaurant is going to serve anything similar to what I cook at home......nope,nothing Italian for me if it's not from my kitchen....

We all cook here - we're all foodies ..... if someone here says " yum,it's so delish" I'd try it,lol

I know! I'd never even heard of them till I became vegetarian.
Lenticchie( lentils) is really a popular dish with Sicilans(& all over Italy) -I grew up with it but my favorite was when my Dad would Americanizs Pasta Lenticchie.... Mom used to cook the lentils with escarole and finely chopped onions,carrots etc and Dad would throw in sliced up hot dogs- then they'd break thin spaghetti up and throw it in last..... man those hot dogs did the trick,yummy

Not exactly something a vegetarian would find appealing though,lol

How did you know that's exactly what he said, were you hiding in our kitchen? :lol: Yes, when I make my own pizza I not only choose the ingredients but use extra of everything especially oregano.

That's like when people recommend " great" Italian food at this or that restuarant- I won't even try it because no restaurant is going to serve anything similar to what I cook at home......nope,nothing Italian for me if it's not from my kitchen....

We all cook here - we're all foodies ..... if someone here says " yum,it's so delish" I'd try it,lol
