Lunch will be waffles. Dinner will be a frozen something called "Grandma's chicken and veggie bake." Stouffer's makes it, and it is quite tasty! Chicken, rice, veggies in a very nice sauce. Casserole, actually. Of course, being mass-produced, it needs salt and pepper, but EVERYTHING needs at least pepper, in my world. Even my own cooking, when I'm cooking for more than just me!

A friend brought over 3 home grown tomatoes!! I have not had a home garden tomato in years! I really miss them.
Last night was just one sliced tomato, baby fresh mozzarella, fresh basil, EVOO, and a tiny sprinkle of good balsamic vinegar. It was so good. I drank the juice! Delish.

Will have that again today, adding a bit of romaine lettuce and a tiny pita bread or two.

The other meal today will just be hummus with some carrots, and an iced green tea.

Busy day, so lunch with be my supper, with supper being a quick snack...

artiemom artiemom Yay for tomatoes! We've had three so far this summer from the garden. Something is getting into them, even with the fence.

My BIL gave Rick some homemade sausage and he's going to grill tonight. I really have to start being more careful; this week has not been a good week food-wise. I guess grilled hot sausage sandwiches are on the menu.

My last one which was my first was 10 years ago and fortunately had no polyps. I was told to come back in 10 years and I'm hoping for the same results.:crossfingers: I feel it's a necessary test/procedure for preventive care but not looking forward to it either. Were you able to follow the prep diet? That's the worst part for me.
The prep is terrible it has been more then 10 since I had my last. I opted to do the fit test every year instead. There was no issue on the one I had and I have no family history .

Frozen chicken taquitos and mini-tacos heated in the air fryer. Stubbs barbecue sauce in a little dish for dipping.

Corn on the cob in microwave as rubysmama rubysmama recommended. I was doing 3 ears, which got jammed up as turntable plate rotated. Eight minutes not quite enough so I cut kernels off the cobs, put in a mixing bowl with butter and salt, added 30 seconds, stirred around and another 30 seconds. Good enough.

And mashed up a perfectly ripe avocado with juice from one small lime.

And that all added up to a very nice dinner.

Corn cobs cut in chunks. I could, I suppose, use them to make corn cob stock. But think instead, that at dusk they will go out for the raccoons.

Yesterday was a nice salad with a little chicken, romaine lettuce, baby Persian cucumbers fresh mozzarella pearls and Garden tomato!! EVOO and a splash of balsamic vinegar completed it.. So good.

Today, I have the last garden tomato. It will be the same as above, but I will add some fresh basil, from in indoor basil plant.. Man so good

I was told that I may get some more tomatoes!! fingers crossed.

Been cooking since about 3am and I love that because it's only 8am and I'm done in the kitchen!
I made 12
manicotti,will freeze 3 bags of 3 each plus have one for tonight,Im sure I'll eat two and I always like a leftover

Made a big tray of eggplant parmigiana( that's what took the most time ,frying 6 eggplants) - I froze 3 portions (ea portion serve 2 people each at least)

Had skirt steak which I did a pizziola( froze 4 individual portions). Cooked 2 packs talian sausages. And made a pot of pasta fagioli with pork neck bones( froze 4 -1qt portions)❤❤❤

So,it was mostly Italian morning but I stuffed a whole chicken ,surrounded it with cut up red potatoes, baby carrots & onion and baked it - yummy! Now I needn't cook for days with a frig and freezer full of ready made foods

I feel for you! I went through that last month!! It was a 2 day clean out prep--- not fun at all. I was so dehydrated!
It's over! :clap: My colonoscopy went well but I hear you on the prep diet. That was harder for me than drinking the prep solution. I couldn't wait to get home, eat my normal breakfast and will celebrate tonight with dessert. I'm thinking about pasta for dinner with fresh veggies added in and garlic rolls.

It's over! :clap: My colonoscopy went well but I hear you on the prep diet. That was harder for me than drinking the prep solution. I couldn't wait to get home, eat my normal breakfast and will celebrate tonight with dessert. I'm thinking about pasta for dinner with fresh veggies added in and garlic rolls.
Or a KWIK flight will get you any pasta dish you want.....🥰

Let's see here...lunch will be taquitos. I'm feeling distinctly sour cream-ish. Dinner? Oh, pork patties with turnip greens/roots and hoppin john. Because I'm also feeling distinctly Texas Pete pepper sauce-ish, as well. LOL, the turnips make a great carrier for the sauce!

Oh wow,my Dad loved fried bologna- haven't heard anyone doing that since I was a kid

How is he doing with the hip? Feeling good as new yet?
