Mamanyt1953 Mamanyt1953 Mamanyt1953 Mamanyt1953 Our Banshee has been gone for a good 15 years now. It took me quite a while to buy a cantaloupe and eat it. Cantaloupe was one of Banshee's favorite foods, only surpassed by banana. I couldn't buy one; it was too hard to buy it and eat it, knowing that the Queen couldn't share it with me.
I'm sure I'll eat tuna again, but...not yet. I found a can of white meat chicken, and made chicken salad.

Tonight, waffles for lunch. A hamburger patty with hoppin' john and creamed corn for dinner.

I'm having a colonoscopy next week so have to avoid certain foods, i.e. most of what I eat like whole grains, whole wheat, berries, beans, nuts, raw veggies. anything with seeds, etc. :frown:
I feel for you! I went through that last month!! It was a 2 day clean out prep--- not fun at all. I was so dehydrated!

My last one which was my first was 10 years ago and fortunately had no polyps. I was told to come back in 10 years and I'm hoping for the same results.:crossfingers: I feel it's a necessary test/procedure for preventive care but not looking forward to it either. Were you able to follow the prep diet? That's the worst part for me.

Yes, the prep diet-- about a week in advance was no problem for me.
The very restrictive diet, beginning 2 days before was horrible for me. I absolutely hate jell-o.. It is gross!
I will tell you, that the chicken broth never tasted so good ~~ as when I was taking the prep.

I do not care for gatorade, either.. I tried the powdered IV Nutrition, but it was just as bad...

Lucky me. Since polyps were found, I have to undergo another colonoscopy in January! Need to discuss prep with my GI MD.

Yesterday's dinner

Used wok to saute sliced onion and sweet yellow pepper, sliced baby bella mushrooms, frozen green peas. Added rice left from a previous dinner. Reconstituted Oxo chicken bouillon cube to which I added soy sauce, added to wok and quickly covered.

While all this was going on I air fried some Costco tatsuta-age.

Thickened liquids in wok with corn starch, added beaten egg and stirred until set.

Plated up. Note to self: air fryer tatsuta-age better / crispier than in toaster oven.

That chuck was so good last night! It took me from 7 in the morning to around 3:30 in the afternoon at 225F. Yum! It was excellent. I am really enjoying the Traeger. I injected the beef with a bourbon/broth sauce and then basted the beef a couple times during the process. Saved the leftover sauce to make a bit of gravy for tonight.

We're having some of the sliced chuck tonight with mashed potatoes (my treat for the week) and beef gravy, along with some green beans. The rest will go into the freezer for a meal or two later on.

Didn't make the dinner I wanted to last night. Til Rick got home from the Hospice meeting about his mom, he had a bad headache and no way was he able to dig potatoes.

So he dug some up today for me. We're having warmed-up smoked chuck roast with gravy over mashed potatoes with baked squash.
