I used to love our restaurants with salad bars . Unfortunately once Covid hit they did away with them and never brought them back
Here we lost fresh rolls during covid. They started packaging them which ruined the nice crust on the outside of the rolls. The store used to have rolls ,cookies, bagels, muffins etc all those could be bought as single items. They provided paper sheets to pick up items to put in plastic or paper bags. I had a feeling that was going to go away permanently and it did. I think the only way I could get a decent roll now would be to make them and that is a lot of work.

Pork fried rice.

Cut boneless pork cutlets into small cubes, marinated for 30 minutes with a little soy sauce. Cut up carrots, sliced onion,cut up broccoli, diced sweet orange pepper. Tore the last of yellow oyster mushrooms. Made up a cube of Oxo chicken bouillon.

Drained pork. Tossed with cornstarch. Browned in hot wok with a little oil. Set aside.

Added a little more oil, added vegetables, tossed and kept tossing. Added mushrooms to pan. Tossed, added drained soy sauce and a little more soy sauce to bouillon. Added pork. Added frozen green peas. Added previously cooked rice. Stirred everything together. Turned heat down to strong simmer and covered pan while I beat an egg. Added egg and stirred / tossed until done.

Plated up, garnished with thinly sliced scallion. And enjoyed.

I kinda want a tuna salad sandwich for lunch. Dunno. I haven't opened a can of tuna in 16 years without draining the water for Hek's "tuna soup" (she wouldn't eat the fish, just wanted the water). We'll see. If not, waffles. Dinner will be a chicken patty with okra and tomatoes and green beans.

We were in the city today to watch practice for the U.S. Blue Angels Air & Water Show. We're stuffed from lunch at a Mediterranean restaurant so dinner will be something light, i.e. peanut butter and raspberry preserve sandwiches with a honeycrisp apple.

Mamanyt1953 Mamanyt1953 Our Banshee has been gone for a good 15 years now. It took me quite a while to buy a cantaloupe and eat it. Cantaloupe was one of Banshee's favorite foods, only surpassed by banana. I couldn't buy one; it was too hard to buy it and eat it, knowing that the Queen couldn't share it with me.

Tonight's dinner was meatless spaghetti (tomatoes from our garden last year) with peach cobbler for dessert.

I know exactly how you feel. I have many large cans of tuna in the house. I would like a nice tuna sandwich; however, the memories of sharing the tuna water and tuna with Geoffrey seems emotionally overwhelming... in addition to the large can being too much for one sandwich. I used to add a chopped egg to it. Geoffrey loved the tuna water and the people tuna.... sigh

changed dinner plans after stopping by chinese market enroute to my dads . the market just recieved a fresh load of dungeness crab and red spotted prawn this morning quick call to my dad to ask if he wanted that for dinner so gf and i left with 8 crabs and 6 pounds of those shrimp. so its dinner at my dads house with baby sis and gf dad :lol:i need some kinda red meat to eat still though
