Hubby is trying to make some extra money helping his friend by working nights. so he worked last night and will work tonight. Even though it’s super hot and humid he wanted lasagna but said he’d settle for baked ziti. My oldest son heard lasagna and went to the store with me and helped make it. My dear husband ate his lasagna for a late lunch/ early dinner before taking a nap before work.

Brazilian bbq all you can eat i had picanha,garlic rib eye tri tip sirlion and some salad to balance things out🤣

Lunch will be a bit of left-over stromboli and potato salad. Dinner will be pork patties with green beans and creamed corn, with a small helping of cherry cheesecake ice cream. I can't do that often, but BOY, I'm looking forward to it!

You speak my language! What I mean is I love pasta with veggies and Mediterranean food. :thumbsup:
I got this cookbook out of library. I've had it for 12 weeks, it's not all vegetarian but has a lot that are. So good! I just bought the e book version of it cheap because I"m going to be using it a lot. Mediterranean is one of our favorites also.

Little vegetarian spring rolls.and some chicken thingy named something like Japanese inspired tatsuta-age both frozen items from Costco. Used lightly oiled pan in toaster oven to defrost, heat, lightly brown - turning halfway through. Sauteed sliced onion, sweet orange pepper, foraged yellow oyster mushrooms, green peas plated over rice. Looked good, mostly tasted good. The dark meat chicken tatsuta-age - small to tiny pieces. Was so-so. Won't buy again when we finish the package but instead will try do-it-myself.

Perhaps next time I'll try air fryer and see if that's better. Not that that will improve the size-of-pieces issue.
