I had a two hour phone call with a former co-worker who was recently diagnosed with breast cancer. So my dinner plans changed and I ended up just having garden vegetable soup. DH was on his own and made a chicken with swiss cheese sandwich on a bagel. We both had honeycrisp apples for dessert.
Tonight I had elbow macaroni, pasta sauce, veggy meatballs, tofu, cole slaw, and a
corn muffin. I guess it was the cooks version of beefaroni. It was very good and it was sweet of her to make it for me.
I think we'll be having leftover pizza and I'll make a salad for us to share.I made an Irish apple cake yesterday,and think we may have a piece for dessert....maybe with a cup of hot tea.
The temps got much colder so I'm glad I made that large pot of veggie chili and still have plenty of leftovers. We're going to have it over brown rice. Clementine and seedless red grapes for dessert.
Chili, made today. In the future, I think I will make half the recipe. That's plenty for one person. I freeze it in individual containers, but I'm usually sick of it by the time I eat it all. Better to have four or five servings instead of eight.
Practiced making vegetarian omelets for lunch and dinner. I would appreciate tips or a good recipe. It broke. I had trouble flipping it. How long do I cook it? Was 8 minutes on Medium too long?
It had 3 eggs, 2 pieces extra sharp cheddar sliced cheese, 1/4 cup corn, 1/4 cup kidney beans, 1/4 cup vegetarian crumbles, 1TB ricotta, garlic parsley salt, superhot carolina reaper powder, paprika, sage, korean chili flakes, cayenne pepper, clove of garlic, 1/4 cup ketchup on side.
