Another long day so made my go to easy dinner, i.e. big bowl of arugula salad with zucchini, green onion, green pepper and avocado. Fortunately I still had a few oatmeal chocolate chip bars left.

Last night I had scrambled eggs, sausage patties and a toasted blueberry english muffin. No idea what tonight will bring.

took a container of tomato sauce cooked with boneless skinless chicken breast and Italian sausage.. served with rotini pasta.. and pecorino romano cheese...

So good... Have not had pasta for ages... ate 2 servings... piggy, I am...

Broccoli, cauliflower and carrots with two falafels. Plus a leek and parmesan pastry roll.

I took a big lunch of Cornflake Ranch chicken and veggie casserole to work for lunch, so dinner was just two leftover sausage-cheese-onion cornbread muffins.

Black Bean Chili topped with Cornbread

I make my cornbread in my waffle iron so I can just plop the chili on top of it.

Tonight? Cornflakes. Or maybe chicken and rice soup. I'm not feeling awfully perky. Not sick, just...bleh.

i'll heat up a serving of ham and scalloped potatoes, and microwave 2 or 3 tiny white potatoes and have them with some margarine and salt/pepper. dessert will be some pumpkin bread with a little margarine, later in the evening.

I'm feeling kind of bleh too, as far as cooking. I froze all my precooked dinners and don't have anything thawed.

Without thawing anything, I do have cornflakes and milk, and I have tortillas chips to do quick microwave cheese nachos.

Probably nachos for dinner and a bowl of cereal later on for dessert.

Chicken Biryani with cauliflower rice.

This was tasty and we had it for two nights. I heated up some minestrone soup from the freezer last night. My husband has been working 12+ hour days for the pat week and a half, including the weekend. He has a huge presentation at 11:30 and I think he is going to take the rest of the day off and we are going out for a late lunch.

I'm taking breakfast and a big lunch to work, so I'll probably just snack again tonight. Maybe open a can of chili and do chili-cheese nachos.

i'll have a grilled cheese sandwich, and some soup -- either tomato or chicken noodle. some celery pieces with salad dressing as dip. and dessert later in the evening, some pumpkin bread with a little margarine.
