What's For Dinner? - 2019

My mom used to make salmon croquets from canned salmon. I remember them as being quite yummy. Found a recipe that looks a LOT like what she used to do, and may have to try it. We'll see.

Tonight is leftover cottage pie. It turned out pretty well this time. Sometimes I under-salt, which is better than OVER-salting, come to think of it, but I got it just right this time!

I love Spam! And yes, thin sliced and fried until crispy. and I really like salmon croquets, too.

tonight I had sweet and sour meatballs with penne heated up in the microwave. A few lemon sandwich cookies, too. I'll have a slice of It Won't Last Cake for dessert, later in the evening.

I think my mom just mixed canned salmon, egg, bread crumbs and breaded little patties (or croquets) in cornmeal. Then she grilled them in cast iron until they were pretty much "blackened". Spoiler...they should be golden brown, not blackened. As I recall, the inside was quite edible.

I ordered a steak sandwich at a diner. I asked the waitress "Where is my A1 steak sauce?" She said "We don't have that, we make our own steak sauce."
I just about cried.

I guess it is "croquettes" versus "croquets"....unless you really overcook them....then they're like hockey pucks.

This recipe looks good...these are baked, but you can "brown" them in a pan.

Hahahaha well, I admit I win the dunce cap when it comes to seafood, and most other things for that matter
Tonight is fried chicken for everyone, and the dogs and cats will have theirs unfried with bison.

For some odd reason I'm not too hungry for dinner tonight so putting up a sweet potato and broccoli or brussels sprouts. Maybe I'm just a little tired of cooking.

I had fried tofu with vegetables and my neighbor had some kind of noodles with beef, egg and chicken. I don't know what it was called. The noodles was made from rice.
