Tuna and pasta is on our menu tonight. Rick is bowling early, so it has to be quick.
...and the same for tonight's dinner.another serving of lasagna tonight, and acorn squash with a pat of butter and salt/pepper. a slice of 3-layer carob cake with mint carob chip buttercream for dessert, later in the evening.

carob used in a cake like this is actually very, very close to the flavor of chocolate. and i've found that a good quality carob chip tastes very much like semi sweet chocolate baking chips -- at least according to folks (who i've shared some of my baked items with) who've said that they haven't tasted any different than chocolate baking chips.LOL we're still holiday eating - I'm holding out as long as possible before going back to boring
Leftover ham, potato salad (this was a substitute for mashed), homemade cranberries. Oh, and last but not least fresh made shortbread cookies

mint carob......think peppermint patty, not the same as, but along those lines. although, i make some cocoa brownies, using carob powder instead of cocoa powder, and have added peppermint extract to them...with sensational results...tastes just like a peppermint patty! i've also used raspberry extract in them with very nice results.
