We woke up to a cold morning today. DS was walking around with his fuzzy trapper winter hat on. Inside. :rolleyes2: :lol:

I'm definitely ready for some fall comfort foods. Especially after last week went off the rails. I found some Low Sodium Campbells condensed tomato soup at a store this weekend. I've never seen that in Walmart or the other big grocery store before so I'm excited to try it! I use condensed tomato soup for a crockpot Porcupine Meatballs recipe that I've been thinking about lately. So I'm hoping to make those tomorrow. Of course it's supposed to be 80 again in a few days. Oh well. My iron is a bit low so I'm going to try adding some beef back into my diet here and there. So it's a good time to try making those again too.

I could also really go for some homemade mac and cheese with stewed tomatoes. :yummy:



What are your favorite fall comfort foods?




Really I like any kind of stew that can be done in a crockpot. But chili in the crock pot is just SO good. And I can feed us for several dinners with it. Put it over pasta, over a baked potato...eat it with tortilla chips...whatever!

I have a good beef stroganoff recipe that would also hit the spot; but I've not let myself make it in a long time because it's a bit high in sodium and saturated fats. :sigh: I can't make that healthier very easy like I can with chili. Same for the mac and cheese. I love turning it into a seafood mac and cheese with crab meat or imitation crab meat and a sprinkle of Old Bay seasoning on top before baking. For lunch; grilled cheese and tomato soup are *chef's kiss* too. And another thing I don't let myself have. How come everything good and tasty needs hot cheese? :disappointed:

Definitely a good hot veggie chili - I use lots of beans, three kinds of peppers, green onions, fire roasted crushed tomatoes and extra chili powder with cumin, garlic and oregano. The other comfort food I enjoy is homemade cornbread to go with the chili.

Most definately a hot mug of tea...but then there's soup.I have so many favorites I don't know where to start,pastas with a bunch of sauce and plenty of garlic bread....a good pot-roast.. love a stuffed butternut squash.

In NY we have 6 months of winter coat weather. October through March. It's ridiculously cold here.

Casseroles, Pizza, Calzones or Stromboli, Pasta in a stir fry or baked or any way really. Mac & Cheese. Cappuccino!!! Tim Hortons preferably.

There is no fall in FL, except we do have the end of hurricane season.

I grew up in upstate NY (Go BILLS!!) and my favorite comfort food in the fall was vegetable soup by the fireplace. :yummy:

I don’t envy you all that don’t get fall weather except when you also don’t get snow. Your trade off is bigger bugs, reptiles, and more hurricanes that you can all keep too. 😅 And some of that lush jungle looking foliage. We get a little of everything here so i guess thats ok.

I would love to find a low sodium ramen. I know i could make it from scratch like I do other soups; but I miss the cheap packet kind sometimes. Those noodles and broth just hit the nostalgic comfort buttons I guess.

My family just doesn’t seem to appreciate a good casserole. :disappointed: Maybe I should try small ones. I did find Campbells has also come out with unsalted cream of mushroom and things like that that are good bases for some. I’ll have to check the saturated fats and see what I can do!

😖after my stroke the doctor told my family to go ahead feed me the ramen cook like normal and then dump half the soup out and replace it with water🤢🤮tastes gross and really bland that way though though i admitt to not knowing exactly what the ratio was they gave to me it could have been ost of it with enough left to color the water added:lol:

Ok that’s criminal. :barfgreen: I mean I wasn’t using the entire packet for my own but it didn’t end up that bland!! I do like the unsalted stocks so i can add my own salt. But when things end up bland its such a disappointment. Sometimes i just add parmasean cheese to up the salt and flavor. :lol: My grandma always sprinkled a little on soups. But not ramen. That’s not a cultural fusion I can get behind. 🥴
Beef stew, chicken corn soup, chili all hit the spot on a cold night. With Vermont cornbread, please.
Ok I’m googling Vermont cornbread. The best cornbread i ever had was in a cast iron pan at this farm restaurant in the middle of nowhere Tennessee. It had the tang of buttermilk yet a bit sweet. :cloud9: All other cornbread has been a disappointment since. :disappointed: That doesn’t mean i won’t try again though! I need to learn to use my cast iron pans too.
