Whenever I am sitting on the floor and petting my cat, out of nowhere she will get up and started eating my hair! Big chunks too! I have to stand up and walk away whenever she starts it! Why does she do this?

Sounds like she might be trying to groom you. Social grooming is just how cats show affection towards other cats.

Yes, trying to clean/groom your hair is a good sign. My cat attempts to do this occasionally, but seems to quickly get confused and stops. Your cat probably doesn't understand why you keep getting up and walking away instead of letting her groom you. I say "good girl!" to my cat and then I move away slightly so she doesn't end up swallowing one strand of my hair which almost happened before.
