I hate them but now I kind of feel sorry for them because I think so many
people dislike them that someone decided to give them their own day.

I like them and I have not had them in years. I had some for dinner last night but then I found little bits of ham in them so I could not eat them.

I don't dislike them, but can't say I like them either. I rarely eat them because of the calories. Butter beans are better, but I don't eat those much either.

Well, it was meant to be! I went to start some black beans in the Instant Pot, and there in the drawer was a bag of dried lima beans. :noway: Hubby must have bought them at some point, I know I didn’t. :headshake:

So I thought, what the heck, I’ll make them instead of black beans for dinner tonight. I found a recipe for ‘Greek style’ limas to try. (I do have a back up plan for dinner in case I discover I still hate them.) :lol:

I love lima beans! I get the baby lima beans in bags and cook them the way my mother used to: soak them overnight, cook them to boiling the next day and add a T of baking soda. Boil for 5 minutes, drain, rinse. Add enough water to cover them, throw in some ham pieces and simmer for many hours until they are mush. It makes like a gravy and I put that over rice. One of my all time favorite meals!

Although I'm vegetarian lima beans are not one of my favorites. I will eat them but they're not on the top of my list.
