Well, it was meant to be! I went to start some black beans in the Instant Pot, and there in the drawer was a bag of dried lima beans. Hubby must have bought them at some point, I know I didn’t.
So I thought, what the heck, I’ll make them instead of black beans for dinner tonight. I found a recipe for ‘Greek style’ limas to try. (I do have a back up plan for dinner in case I discover I still hate them.)
I love lima beans! I get the baby lima beans in bags and cook them the way my mother used to: soak them overnight, cook them to boiling the next day and add a T of baking soda. Boil for 5 minutes, drain, rinse. Add enough water to cover them, throw in some ham pieces and simmer for many hours until they are mush. It makes like a gravy and I put that over rice. One of my all time favorite meals!
