Our cat just got spayed yesterday and we know she isn't supposed to eat a lot or jump around a lot and my question is should we feel okay leaving her home alone? And when can she start eating normally?

Calling your vet is a wise choice. But the kitties are pretty tough. When I was a kid we took my cat in to get her spayed and the vet told us the same thing. It was impossible to keep that cat from jumping. 2 hours after we brought her home she climbed a tree. 2 days later she took her stitches out. She was fine we just kept a very close eye on her.
