I’m not sure the breed of my cat. I know she is a tabby.

Hi and welcome to TCS (again!). Tabbies are no specific breed, but rather a domestic short or long haired (DSH/DLH) cat. Yours is a DSH mackerel tabby - the 'mackerel' describes a particular pattern within the tabby 'family'. Her pattern is striking!

This was her as a kitten. She changed so much!

It's funny the changes a cat can go through as they mature! But, it is pretty common for their coloring to darken/become bolder as they hit adulthood.
Yeah, on her childhood pic I would say, she is a ticked tabby (no visible pattern on the body).
But on her adult pics, she is clearly a mackerel / possibly broken mackerel - tabby. she has also darkened up some.

She is a beauty 
and she looks to me like a dsh brown mackerel tabby… it’s hard to believe that’s her as a kitten because as Stefan said it looks like she is a ticked tabby there so, that’s a pretty dramatic change, but maybe it happens more frequently than I have seen.
I think she’s a broken mackerel too, it looks like she has some spots.
