How can I tell what breed??

My female cat I was told is half chinchilla persian? I got her at 8 weeks old and have to admit she has very unique colouring in my opinion.. My male cat I have no clue what he is as I rescued him from a abusive home when he was 8 weeks old.. How do I determine their breeds?

My male Smokee

Snowee is very fluffy and has quite longish soft fur...
Smokee is short haired and not fluffy like Snowee...
