Drowning In Chicken Stock

I needed chicken broth for a recipe and opened up a box of Swanson's chicken broth, but when I looked into the opening I saw the foil was broke. So I thought that maybe this was already open and had been sitting in my cupboard all this time. So I opened up a box of stock and the same thing happened. I had one more box of stock-same thing. Then I read on the box "twisting cap breaks foil seal" :doh: And I also had a whole chicken defrosted that I was going to make my own chicken stock with.

I did use the chicken and made my own stock, then also added the two boxes of stock and broth to my pot. I froze some of it and kept some in my fridge.

So far I have made chicken noodle soup and a Greek lemon, rice, and chicken soup (which was SO GOOD!) And I plan to also make a chicken enchilada soup next. Oh and I also have stuff to make butternut squash soup, too.

Any other ideas for chicken stock, since I have so much of it? :drinking:

  • Simmer your rice, noodles, orzo, quinoa, or couscous in the stock. Depending what you'd use pasta for in a dish, you could simmer your pasta in the stock instead of water.
  • Chicken and dumplings, without the chicken, and lots of vegetables
  • Make gravy (you can freeze gravy)
  • Use it in mashed potatoes instead of milk
  • Simmer vegetables in the stock instead of using water
  • Use it in a stir-fry instead of a lot of oil
  • Make a casserole of stuffing for a side dish and use the stock
  • Make egg drop soup

Cats like it, slightly heated up, and added to their food. ;-)
