We sometimes go away for a few days. My cat sitter will come once a day to feed and change litter. Can Stella and chewys be left out as a dry meal in replacement of a second raw feeding?

If not, are there any other suggestions for cat sitters? Boarding/kennelling isn't an option.

Yes, if your cats will eat it dry. I wouldn't recommend doing it on a daily basis for long because it is dry, but as an occasional thing for when you are away, I think it's fine.

I agree with vBall91, every once in a while is fine, as when you are away. Okay option for when you have a cat sitter who might be leary of feeding raw.
Which Stella's and Chewy do you mean--I assume you mean the freeze dried cat food version.
I offered Ritz some f-d cat food as a treat, and she ignored it. And this is a cat who eats (almost) every thing. She does love S&C treats, however.
