Should add to make sure any behaviourist you consult is properly qualified. I have no idea what the US professional body is, but Google will find it (or maybe them) for you. You might also need your vet to refer you and send over a copy of your cat's notes.
Constantly switching food and/or things to try to fix the problem probably won't help.

All Siamese tend to get darker as they get older. If he goes out he will get darker as well, as it's cold that makes the coat go dark hence colour on the ears, nose, paws, legs and tail. And scrotum if it's a boy cat.

Shedding goes on all year round, moulting is when the winter coat is being lost in spring.
It looks like his pads and nose leather are black, so he's a black cat who happens to be at the browner end of black. Very sweet boy, bet he is pleased to be in a home not a rescue. His markings may continue to fade over the next few months - at 9 months old he is still not finished developing.
No Munchkin, thankfully, as so far as I can see her legs are proportionate to her body. Munchkins have very short legs for their body because they have a mutated gene.

Like most cats she's no particular breed - suspect she's a domestic longhair with a nice fluffy tail. Her colour is tortie and white, and she's got the Van pattern of colour on her ears and a bit on her head, and (I suspect) on her tail.
She's a pretty girl.
The last pic shows her eye colour well. It's really hard to tell what colour is with the cream as the photos are in indoor light. And blue eyes normally go with being a pointed cat. Tonkinese don't have blue eyes and it's also a very unusual colour variation.
