Is there a general rule of thumb re: measurements when substituting beans/peas for ground meat in recipes?

Thanks oodles! I think I'll start with trying to modify a recipe that's usually pretty forgiving, such as meatloaf, and see how that goes. And if it doesn't work out, I can always whip up a batch of tortillas and make tacos.

Is there a general rule of thumb re: measurements when substituting beans/peas for ground meat in recipes?

Hee! I was afraid of that! Thus far, I haven't had too many culinary disasters as I've been experimenting in the kitchen like a mad scientist, although there were a few close calls when I learned how to bake bread while we were in lockdown. But I do tend to be a tad obsessive about...

Is there a general rule of thumb re: measurements when substituting beans/peas for ground meat in recipes?

Thanks! That's a helpful start. :) I figured it wasn't as easy as just substituting one pound of uncooked meat with one pound of dried peas, beans, etc. I just thought maybe there might be some general guidelines of which I was woefully unaware. I have tried some vegetarian recipes, and my...

Is there a general rule of thumb re: measurements when substituting beans/peas for ground meat in recipes?

Sorry for such a dumb question, but I'd like to try replacing ground meat in some favorite family recipes, and was just needing a starting point as to how to proceed. For example, if a recipe calls for one pound of ground beef, and I cook a one pound bag of lentils, how does that work...

Need some help getting started on a mostly vegetarian diet :-)

Relatives who have actually developed the disorder are currently undergoing therapeutic phlebotomy, the frequency of which is determined by their lab work and other diagnostic testing. The rest of us just have the genetic mutation, at least at this point, and we'd like to keep it that way...

I tend to use lots of spices and peppers when I cook, so hopefully that experience will come in handy when using commercially prepared meat substitutes  We did think it odd that so many members of our families developed cirrhosis, even though they didn't drink. However, these sorts of...

Okey-dokey. I'll give the ground beef substitutes another try. Thanks! I do have a deep pie dish that might work. If it doesn't...well, I guess I could try making fried cornbread in a stainless steel skillet. *sobs some more* Cast iron cookware is awesome! But it does require a bit of TLC...

We've had gardens off and on over the years, with varying degrees of success. But it's just more trouble than it's worth right now. Heck, I can barely keep up with the regular yard work, and the grass and weeds are currently in a semi-dormant stage! :paperbag: I have thought about growing...

Oh, gosh! I love, love, LOVE caramelized onions, especially in fish and avocado tacos! Maybe I'll try baking or pan-frying some tofu and see if that will work as a decent substitute for the fish -- or an indecent one. That chili...er, I mean "soup" looks good. Just curious...how does...

Need some help getting started on a mostly vegetarian diet :-)

Chili is very serious business here in Texas, so there's no way I could get away with making a meatless version. We're funny that way. But if I call it soup instead, that would probably work. I did accidentally stumble across a recipe that my family liked a lot. I had some leftover...

Wow! Thanks ever so much! This morning I felt a little overwhelmed at not being sure where to start. Now y'all have provided so many options, I almost feel a little overwhelmed by all of the possibilities!

Ooh, those look interesting! Thanks bunches for the recommendations. I truly admire people who are dedicated to a vegan lifestyle. I'm not sure where we'll eventually wind up on the spectrum, but I figure we gotta start somewhere! The journey of a thousand miles begins with a single step, or...

Ah, okay. That sounds simple enough. And I love Bob's Red Mill products. :) We are allowed to have eggs, as they can also help to inhibit the absorption of iron. But I figure the fewer eggs we eat, the better from a cardiovascular standpoint. ;)

Thanks for the additional links. I'm especially fond of rice and beans, so those recipes are right up my alley. :) Many years ago, I used to go to a vegetarian restaurant that used tofu, soybeans, and other stuff as meat substitutes. They were so good at it, you honestly couldn't tell the...

Oh, bless you! Those sites look very promising. *hugs you tight* To be honest, I've never really cared that much for meat since I was a little kid, and used to drive my mother to despair when I'd prefer to eat peanut butter sandwiches instead. So I think I could easily become a vegetarian...

Way cool! Thanks for all of the info. :worship: I think my biggest challenge at this point is a lack of imagination. I've been cooking more or less the same things for so many years based on family preferences, I had completely forgotten there were lots of other vegetables available! I never...

Thanks oodles for all of the links! I need to order some stuff from Amazon anyway, so I'll just slip that book into the cart. Thankfully, beans and rice are already a staple of our diet since I'm Hispanic. I just need to figure out alternative ways to season them. I'm ashamed to admit...

We need to cut back on our iron intake for health reasons. So we thought we'd try to start transitioning to a mostly vegetarian diet, since plant-based sources of iron aren't as easily absorbed by the body. But we do need to include dairy products, as they help to inhibit the absorption of...
