So I think I am going to head to the grocery store and pick up the ingredients to make instant pot shrimp scampi. I also have the ingredients to make kielbasa and sauerkraut. There is also a very good chance that for dinner I will go and get takeout from the new taco truck nearby. :dunno:
Have you made the shrimp scampi in the instant pot before? I do the whole go out and get ingredients then get take out thing too.

I made beans and rice tonight. This is one of the very first vegetarian meals I ever made for myself, back when I was still eating some meat, but trying to add more non-meat meals to my rotation.

It's a one pot meal, consisting of onion, green pepper and garlic, plus red kidney beans, stewed tomatoes, and of course, rice. The seasoning is chili powder, celery seed, and black pepper. It also calls for Worcester sauce, but I usually omit it, as I rarely have the vegetarian one, and regular Worcester sauce container anchovies, so not vegetarian. Today I put a few corn niblets in, as I didn't have much green pepper. It makes a little over 4 cups, so (for me) 4 servings, and since it freezes well, easy meals for another day.

Grilled shrimp with a chopped salad. I was going to make it Sat night, but Rick wanted to go out for dinner. So we're doing it tonight.

BTW, in case anybody is interested. Amazon has their instant pot on sale for $50, I think it is.


It's $59, but there's a $10 coupon, so it's actually less than $50. Free shipping. An early Prime Day offer. I was tempted, but then my computer bit the dust. And that ended that!

It's July. It is hot. And humid. Do you know what that means?

Here's what I found in my woods this morning! Yumm! Tonight it will be leftover broiled chicken thighs with chanterelles and onions over rice for dinner.

I spent the afternoon working in the garden, and when I came in I had just enough energy to open a can of baked beans. I had half the can, plus a slice of oatmeal brown bread, and an apple.
I have not had Heins baked since I was a kid. The only kind I can get around here is Bushes Vegetarian Baked Beans and they are good.
I am eating a Amy's Dairy Free Vegetable Pot Pie for dinner tonight. They are also very good.

I have not had Heins baked since I was a kid. The only kind I can get around here is Bushes Vegetarian Baked Beans and they are good.
The Heinz beans in tomato sauce are the only canned baked beans I like. I'm not sure if we have Bushes beans here or not, but if we do, they definitely don't state "vegetarian" on the label.

That sounds good. Must check and see if we have that here. I don't buy Amy's products often, as they are rather pricey.

Yesterday I made a big tub of cucumber and onions with a little vinegar and sugar
Is it cooked, or still raw?

Oh, those and morels are my faves! and you can just go out and pick them! :clap:

C catapault Yum! Just yum! Those chanterelles look lovely.

I had a bit of a headache last night. When we came home from groceries, I had a tuna sandwich (40-calorie bread, a wee bit of light mayo, mustard, drained tuna in water, and some zucchini relish; I didn't feel like chopping onion or celery. With some blueberries as a bit of dessert. I threw the tuna salad together, ate my sandwich and blueberries, and was in bed by 8:00 and probably asleep by 8:15.

Tonight Rick is grilling smoked pork chops with a big twice-baked sweet potato that we'll share and a bit of chopped salad. My dessert will be the last of the container of frozen blueberries in the kitchen freezer, probably about 3 ounces or so. I'll have to bring up another container of blueberries from the basement freezer. I do love frozen blueberries.

With yesterday's hot dry weather the remaining chanterelles that I left outdoors to grow a little more have gone over, in just one day. That will teach me. Last night we had some of the refrigerated chanterelles sauteed with onion, green peas, pan grilled shrimp over rice. Very nice.

lizzie lizzie When I make bread and butter pickles I slice the onions and cucumber, sprinkle with salt, place in colander in the sink, then top with ice cubes and leave for a couple of hours. It really helps crisp them up.

Winchester Winchester I only once found a morel here. The little black chanterelles are superb but few in number and difficult to find. We also like when I forage for chicken of the woods and hen of the woods.

C catapault , lizzie lizzie I have Mom's recipe for canned bread and butter pickles; it's canned, not just chilled in the fridge. I wonder if I could use small zucchini in the recipe? I already use zucchini in my sandwich relish instead of cucumbers and it makes a delicious pickle relish. I don't see why I couldn't at least try a batch. I'm not talking baseball-sized zucchini, but the smaller, more cucumber-sized zucchini, and only green zucchini, not yellow summer squash. That's too bad about the chanterelles; they looked so good and I bet the dish was delicious.

M maggiedemi I love potato salad! Rick prefers macaroni salad, so I make that more often, but every once in a while, I get a craving for potato salad. yum! I'm coming to you for dinner tonight (but no hot sauce on my serving). :)

I didn't feel like chopping onion or celery.
You can pick up a decent little mandoline with several blades for about $20. The larger julienne blade will "dice" an onion in no time flat. HEY, it keeps me in onions for the hot dogs...no fuss, no muss, no bother!

SO...last night was OF COURSE, hot dogs with cheese and onions, and they were so good I'm going to do it again tonight. I realized that I hadn't had a hot dog since the 4th of July, and went into immediate withdrawals!
