It’s been a crazy day and it’s just me as my kids and hubby are at a ball game. I was thinking the leftover chicken veggie casserole over rice. But now I’m thinking BLT sandwich. Hmmmmmm which one?
I'd eat whichever thing (the casserole, or the BLT ingredients) need to be used up first and save the one you don't choose for tomorrow. No potential for waste that way :thumbsup:

Seeing that as of last Friday it is officially summer - I made tuna and macaroni salad for our dinner tonight. Elbow macaroni, tuna (canned, water pack), sliced black olives (from a can), capers, diced sweet red pepper, sliced (leftover, cooked) asparagus, mayonnaise, Marie's coleslaw dressing. Very nice. I had seconds.

Asparagus in it sounds good! I had macaroni salad for dinner last night too, with hot sauce in it. :yummy:
A lot of people seem to be eating macaroni salad lately. I had it for dinner last night and again tonight. I just put in everything I have on hand. I forgot to get green peppers the other day at the store and that is my favorite thing to add.

Rick prefers macaroni salad; I prefer potato salad. We enjoy both during the summer and, sometimes, in the winter, too. When I make macaroni salad, sometimes I'll add carrots to the mix, sometime frozen peas. When our son was younger, it was a good way to get a few vegetables into him because he loved macaroni salad. And I still do it from time to time. I really wish I could make the salads and get them to taste like my mom's. She made the best and, for the life of me, I cannot duplicate them. I can use the exact same ingredients, but it doesn't come out the same.

Tonight, we're finishing up the hamburgers (or should that be hamberders??) from last night. With some fries done in the air fryer. And coleslaw....I'm on a coleslaw kick.

I like coleslaw, too. My mother also made good macaroni salad. I also like my mac salad with carrots, peas, onions, green peppers and sometimes cheese.

Macaroni salad and mac & cheese go great with hot sauce. I've got 25 new sauces to use up.

I like coleslaw, too.
I never liked coleslaw until I tried putting it on a sandwich.

Oh yes, I need to have peas in my mac salad.

Sure, why not? That actually sounds like an interesting variation.

It seems like everybody is having asparagus lately. My favorite.
