Macaroni and cheese with tomatoes. According to Cook's Country, this is a dish that could be found in the automats back around the beginning of the 20th century. People would buy dishes of this for their lunch. I made it a while back one night when Rick's mom came for dinner and she remembered it from years ago. It's pretty good, made with half-and-half (I use skim evaporated milk) and chicken stock. It makes a full pan, so there's always leftovers. And it makes a nice change from regular mac and cheese.
Did you use fresh tomatoes? My mom would use stewed canned and saute them in butter and a bit of onion. How much cheese and milk? 9x13 pan?

Since I had some leftover broiled tuna steak (had been coated with fresh lime juice and olive oil before broiling) I cut into shreds, mixed with some capers, mayonnaise and a little coleslaw dressing. Made sandwiches on toasted rolls, with a layer of thin sliced cucumber on top of tuna filling (calling it tuna salad would be declasse.) That's what we had for dinner. Pleasant.

Last night neither one of us were particularly hungry so we had a sun dried turkey sammie with lettuce,tomato,onion and cheese on pumpernickel/rye swirl bread.Mighty tasty I must say!Tonight we had patty melts with sautéed onions and swiss cheese on rye.Yum!

OH GOD YES! Thai food, I adore Thai food, and I'm happiest when there are tears running down my face from the spice!
I love it when my food hurts me. This is the only time when pain is good. :D

I had pizza from Dominos for dinner, with Pineapple & Mushrooms. They did a really good job this time. :)

Mia6 Mia6 Hang tight and I'll post the recipe for you this weekend. Canned petite tomatoes with their juices. A full pound of pasta. In a 9 x 13 pan. I'll get the recipe done for you. It's worth making!

Y'all were talking about spicy food and the pain. There was a guy who worked in the paper plant with me. He made his own hot pickled cauliflower. Dear lord, that stuff was to-die-for, it was so good. He used to eat the cauliflower, then he'd drink the juice. It was HOT and the sweat and tears would be pouring down that man's face from the juice. He ate a full quart at one time, he'd rub his belly, and moan about how good it was, and then spend 8 hours drinking water. :flail: I loved working with that guy.

Tonight will probably be pizza. Probably delivery.

We got busy last night and ended up with just sandwiches for supper. I asked Rick to go down to the freezer this morning and bring something up. He said that, since we didn't have pizza last night, we'll just have it tonight. Works for me.

Hmmmm, I could eat patty melts. With lots of caramelized onions.

I'm considering my options here, but I really think I'll be a bit decadent. I have a loaf of rosemary bread. And garlic. I'll crush the garlic and heat it very gently in extra-virgin olive oil, sprinkle with sea salt, tear off hunks of the bread and dip. With cheese and some really sweet red seedless grapes.

I wanted one of those store made rotisserie chickens but it was too early. But I found a pack of rotisserie chicken leg quarters in the prepared food section so it worked out. I like dark meat anyways.

Tomorrow I'm making a string bean, arugula, pasta salad and will have a chicken leg quarter with it.

Peanut butter and black raspberry preserve sammies. I picked up some of the preserves when I was out today. Here's the question...will Hekitty be as nuts over raspberry preserves as she is over raspberry sherbet? You haven't lived until you've had 12 pounds of cat climbing your leg for a spoonful of raspberry sherbet!
