today i'll wash the dishes, scoop the litter boxes, and keep the wood stove going. while i'm in the kitchen washing the dishes, i'll bake the apple pie that's thawed and currently in the fridge. i've already moved the three ingredients to the fridge to thaw, for the upcoming small pan of turkey enchilada lasagna. and i'll spend some time on some planning today, too.

after that, i'll play some computer games, continue with a jigsaw puzzle, and watch something on tv.

Back to work. Blah! :sigh: Leaving early on Friday was really nice.

I bought a pound of instant yeast on Saturday. I still had a bit left from my last pound, but I like to buy fresh every year. And didn't get any back in January. I made calzones on Saturday and then threw together some sticky buns on Sunday. You wouldn't think it, but it's amazing the difference in dough made with fresher yeast. I had thrown both of them in my oven on the Proof cycle and, honestly, those doughs just sprang up. The calzone dough was really nice, but the sticky bun dough was awesome. Perfectly smooth and elastic. I loved playing with it. And it made some seriously yummy sticky buns. I also threw in 3/4 teaspoon of my Buttery Soft Dough Emulsion, just because I could. Yum.

For calzones and stromboli, I use Pizza Americana Dough from Peter Reinhart. For my sticky buns, I use a oldie-but-goodie bread dough from Betty Crocker. It's not failed me yet. I've tried other doughs for sticky buns (just because), but I always come back to Betty Crocker. It's a great yeast dough. I use instant yeast, so it's basically fool-proof; I don't check temperatures or anything anymore.

  • I still have to do a grocery list for shopping tonight
  • Planning commission meeting tonight, but my part should take about five minutes, if even that

Haven't been here in a few days. Yesterday I made corned beef and cabbage. I don't boil it but steam it. I put a few of the big cabbage leaves in the bottom of the steamer basket, put the beef on top of it, fat side down, cut the cabbage into 4 big chunks and arrange them around the beef, put the lid on and steam it all for about an hour or more. Put the potatoes on top of the cabbage in the last half hour or boil them on the side. The fat will all be in the water down below, be sure to check that every so often to make sure there is still water in the pot and add some if needed. This corned beef will be nice and tender and easy to slice really thin. There will be just the right amount of salt (some boiled corned beef is just too bland) and the sandwiches later will be excellent. The cabbage leaves at the bottom look not very appetizing but they taste heavenly.
Today I went to the thrift store to try to find a blazer. I went away with a grey Evan Picone with price tags from the store still attached (would you believe $180.00?), all wool and cashmere, for $9.09. Also a buff colored all wool for $4.97. I also snagged a big Samsonite suitcase with wheels for $10.00. Then I got gas because close to the thrift store is a station with really good prices, usually 20 cents cheaper than anyone around here. So I always go to that store on Mondays when seniors get a 20% discount and I load up on gas at the same time. When I got home I put the clothes on hangers as they need to be steamed to get the wrinkles out and got the price tags off, wiped down the suitcase removing all scuff marks, there were some Chinese coins in one of the pockets. Made a corned beef sandwich, petted the kitties who did not even greet me at the door, I guess they were happy that I had fed them before I left and they had retired to my bed. Checked my emails and got rid of all the junk. Turned on the heat as it is 52F in here and just too cold to be sitting still here at my desk messing about at the CatSite.

Nice find at the thrift store segelkatt segelkatt !

We bought our corned beef brisket last night for Sunday. I used to do mine in the crock pot, but last year I tried it on the grill. The taste was divine, but the texture left a bit to be desired. I'm going to do it in the oven this year. And I'm doing colcannon potatoes. I'm particularly anxious for the corned beef leftovers; Reubens, here I come!

Rick is down with a bad sinus infection. When I left this morning, he was in bed. Some of those infections get really nasty.
  • Breakfast for the kids, walked four miles and got ready for work. I put $20 worth of gas in the Tucson.
  • The cleaner was in the hallway here at work this morning, so I used his vacuum to clean my office floor. It looks much better.
  • I have a hair appt right after work today. I'm getting it hacked; I'm tired of the longer hair.
  • Must scoop the boxes and do a quick vacuum about the living room and kitchen tonight (I'm hoping that Rick will do the boxes, but we'll see.)

Dear Richard is on Day Two of his cold/sinus infection/whatever it is. It's bad. He's going to call the doctor this morning, so I know he's feeling miserable. He wore sweats to bed last night, had his side of blanket on High and was lying there shivering. Yet he doesn't feel like he has a fever or anything. He's been taking Advil Cold and Sinus, but he needs something stronger. I was going to stay home today, just to keep an eye on him, but he me to get my butt to work. He's like me; when we're sick we just want to be left alone.

Had my hair appt last night. I love my hair! She took a good four inches off, did some layers in the back and gave me a side bang. The color is really pretty, too, I think. She did some toning to get rid of the really red spots; my hair tends to "grab" red colors. It just looks so nice and I feel about ten years younger. The downside is that, no matter how much oil I put into my hair, it still gets frizzy. Just the threat of humidity is enough to frizz. But she really did a good job and I'm very pleased.
  • Breakfast for the kids, walked four miles and got ready for work
  • Trash night and scooping. I don't know if Rick will be able to do it; if not, I'll get it done when I get home.
  • Laundry night, although Rick did get laundry done yesterday, so I won't have much at all to do tonight
And I think that's pretty much it for our Wednesday.

today i've kept the wood stove going. i'll wash the dishes, scoop the litter boxes. i'll be assembling and baking a small pan of turkey enchilada lasagna this afternoon -- should come out of the oven right on time for dinner! i'll also bake a small (8 x 8) pan of butterscotch chip blondies in the oven at the same time as the lasagna -- i hate to waste oven space, energy.

after that, i'll play some computer games, continue with a jigsaw puzzle, and watch some tv.

Thanks micknsnicks2mom micknsnicks2mom He did go to the doctor, who put him on an antibiotic. I do know what it is, but can't spell it! Anyway, he's already starting to feel better and he did go into work. I told him to take the rest of the week off, too, but he figured he'd better get his butt in there. He has had more trouble with sinus problems the past 18 months than he has all his life. And my doctor told me that sinus problems are really getting prevalent these days. I've never had sinus issues and I'm starting to have problems, too.

yesterday's efforts took well into the evening. after i fed my cats their meal, i just went to bed -- that was 10 pm or later. i didn't even get the wood stove going again -- it had been 60 degrees here yesterday.

i was making the batter for the butterscotch chip blondies, when i realized that i had automatically put together the double batch version -- two pans of it, which is what i almost always make. so i 'regrouped', and got those two pans into the oven, then got started making the one pan version of them. moved on to assemble the turkey enchilada casserole......which took two small pans. :sigh: those got baked with the one pan of blondies -- three pans in the oven baking. then washed the dishes, because i can't stand waking up to a sink full of dishes needing washing.

the end result is that i now have two batches of butterscotch chip blondies put up (for the hot summer months) in the freezer, that third pan of blondies are in the fridge (desserts for the next bunch of days), and will freeze in portions the second pan of the turkey enchilada lasagna. so i've started in on the desserts i've planned to put up already. :yess:

i've still got extra refried beans, corn tortillas, and rice that need using. so i plan on making 'breakfast burritos' to use that up -- corn tortilla with a little refried beans spread on it, a little rice over that, add a fried egg and a slice of american cheese. i also have some extra roast turkey left, which i'll use to snack on.



today i'll get the wood stove going again. i'll wash the dishes, scoop the litter boxes. i'll slice/wrap/label/freeze that second pan of turkey enchilada lasagna. i'll also spend some time on some planning. i might go ahead and re-pre-measure the bread machine bread batches, too.

after that, i'll play some computer games, continue with a jigsaw puzzle, and watch some tv.

Leaving early today, so the cable-weenie can bring the new remote controls. :yess: The last time he was here, I no sooner got home than he showed up with the new converter box. I'm hoping that's what happens today, too. Then I can get some stuff done around the house.
  • Breakfast for the furkids, walked about 2.5 miles, straightened things up a bit throughout the house (don't want the cable-weenie to think we're total slobs!), got ready and came to work
  • Stop at the bank on my way home, stop at the grocery store (for romaine) on my way home
  • Scoop the boxes and do some quick cleaning (vacuum and Swiffer)

today i've kept the wood stove going. i'll wash the dishes, and scoop the litter boxes. i'm thinking i'll pre-measure for some upcoming dessert recipes today, though i need to mix up some more brown sugar for that first.

after that, i'll play some computer games, continue with a jigsaw puzzle, and likely watch some tv.

We have new remotes and they work well. :yess: And I loved being able to leave early yesterday, get home, and get some things done. I do love being home.

But Rick is not doing well. He really should have taken the whole week off work, but he's a stubborn man sometimes. He was pretty much running on fumes by yesterday afternoon. The antibiotics are not doing all that well now and he's got a horrid headache. His head is so full, he waiting for it to explode. And he's nauseous. Things are not great.

His mom is still under quarantine at the nursing home and she's going stir-crazy. Being in quarantine means they never leave their rooms, so her meals are being served to her. She doesn't really get a chance to walk that much. The entire facility is locked down....we can't visit. I do call her every day, but she says it's not the same. She's read all her books that I put on the Nook and can't get to their "library" to find anything new. The aides give her books, but they don't know what she likes. She's not amused. Oh, she gets it, she understands why, but it's still difficult for her.
  • Breakfast for the kids, emptied the dishwasher, and just finished my coffee. Rick will scoop when he gets up from his morning nap, unless I just do it in a few minutes. I may just go ahead and do it, so he doesn't have to.
  • Errands: banking (I'll probably head out later this morning), a Target run, Lowes, etc.
  • A bit of a vacuum and dusting, wipe down the kitchen and bath (I only did a quick Swiffer yesterday because the cable-weenie was coming).
And I think that will be my day today.

Dear Richard's cold/sinus/whatever it is has now turned into my cold/sinus/what it is. I started in with a scratchy throat yesterday afternoon and am sneezing, sniffing, blowing my nose, and I've a bad headache. I don't think it's even been 3 weeks since I stopped coughing from that last episode and here I am again. Coricidin HBP does absolutely nothing; it's useless.
  • Breakfast for the kids, emptied the dishwasher, and am sitting back here with my coffee. Rick stripped the bed and put the linens in the washer. He'll scoop when he gets up from his morning nap.
  • Work on a grocery list and we may grab some groceries today instead of Monday as Rick has an appt for our taxes tomorrow
  • Three loads of laundry this morning

no mixing up of brown sugar, or pre-measuring for desserts yesterday. once 7pm got here, i 'closed up shop' on doing things.

today i'll wash the dishes, scoop the litter boxes, and keep the wood stove going. i'll get that brown sugar made, too -- i need 3 1/2 (packed) cups total. at some point, i'll make 2 or 3 liters of soda.

i've already spent some time on some planning.

after that, i'll play some computer games, continue with a jigsaw puzzle, and watch something on tv.

today i've got a load of laundry to do, and will do some pre-measuring for upcoming recipes -- i'll do some today, and the rest (for the moment) tomorrow. i'll wash the dishes, scoop the litter boxes, and keep the wood stove going.

i did get the brown sugar made yesterday -- used two 4 lb bags of white sugar in making it. that'll take care of my brown sugar (used in baking) needs for a while.

after that, i'll play some computer games, likely finish a jigsaw puzzle, and watch some tv.

  • Scooped boxes first thing. I like the light-weight litter but it does not mask the smell well. Will go back to regular weight.
  • Tea x 2 cups
  • Arranged for transportation for upcoming appointments with the insurance company.
My helper is on a mini vaca and will be back tomorrow. I miss her.

Winchester Winchester How are you feeling? Have you ever tried Mucinex for a cold? It works really well. Don't get the generic.

Mia6 Mia6 I'm alive, thanks. Actually this morning, I feel pretty good, still have a bit of headache, but even that's minor. I think I'll survive. Yesterday, I tried to walk, made it to a little over a mile, and said, "Nope, nope, nope" and tumbled back into bed until it was time to get ready for work. Today, I got my four miles in, so I'm pleased. I can't take Mucinex or anything like that. I have some really bad allergies to a lot of OTC stuff now and my doctor doesn't want me taking anything. I don't even take a baby aspirin anymore.
  • Breakfast for the kids, walked 4 miles, and got ready for work. On my way in this morning, I stopped for gas.
  • Must scoop boxes tonight
  • I may do a load of laundry as I didn't do any last night
  • Supernatural is new, so Molli and I will go to bed to watch some TV.
