We now have a nice Swiss Cheese roast.

Did you peek through the holes before turning the roast into pet food? ;):lol:

Tortellini with squash and sausage tonight. Are the casings supposed to be removed from sausages before cooking in general? Winchester Winchester orange&white orange&white I read the recipe and it said to break the sausage up while it's cooking and I didn't think that was possible with the casing on so I removed it. And the sausage was still hard to break up :rolleyes: Memo for next time: cut the sausage into bite sized pieces before adding to the pan.

If the recipe calls for breaking it up, then yes, remove the casing. You can cook sausages whole in the casing, in slices in the casing, or remove the casing to break up and brown like ground beef. It just depends what you're cooking. The casing is edible so it doesn't have to be removed.

We met old friends for a late brunch and had so much to eat that I had leftovers for dinner. Homemade English muffins that they serve with cinnamon butter, a loaded veggie frittata over homemade hash browns and, last but not least, homemade cinnamon raisin bread. The place we go to is half bakery/half diner. DH wanted to take home a red velvet doughnut from the bakery side but they sold out quickly which was probably a good thing. ;)

You bet I did, eventually. I even made sure to look in the mirror so I could see what I would look like if I was a meat head. Then I started making All In The Family jokes, wife asked me to stop, I made a comment about stifling, I got a "look" and rather than being in the dog house, I just shut up :biggrin:

Tonight this meat head is having meat balls and pasta with some salad and garlic bread. It should be ready any minute :thumbsup:

I have used both, milk chocolate cuts the acidity better, but the special dark gives a more smokey flavor. SO...I use one square of each! Not much, but you can really tell the difference if you leave it out! It is so subtle, does NOT taste "chocolate-y", but does add something undefinable. Of course, since I only use one square from each bar, I have to sacrifice myself and eat the rest...

I took a boneless pork roast out the freezer. I'll butterfly it, then pound it thin. My stuffing will consist of browned sausage, onion, and celery, some chopped apples, 'shrooms, herbs, and dried cherries. Throw the stuffing on top of the pork, roll it up, tie it up, then roast with a bit of apple cider. Browned potatoes, roasted carrots. And an apple pie for dessert (I baked the apple pie last night.)

And that's the last of the sausage in the fridge. I am thankful that Rick likes sausage because we also had it on pizza last night!

I've got a leftover chicken thigh, rice and bread for dinner.

No large-scale cooking this weekend since the freezer has plenty of breakfast/lunch "packages" from previous weekends to take to work this week.

We went shopping yesterday to beat this weather we had coming...so far just some ice and a little rain....and I picked up a nice piece of salmon at Aldis.I think that's what I'll fix for dinner..just not sure what will go with it yet.I'd like to cook some rice,but...ahem...might not go over so well:)

I made the herby pork roast/veggies/gravy again yesterday.
I was happy to share some with my old art teacher who is kinda like a mom to me, and she looooved it. :hearthrob:

When she saw the pic tho, she decided to give me one of her super nice REAL roasting pans.
I mean, I buy one of those "disposable" aluminum ones about once a year and just wash & reuse until it's too far gone, but she insisted that I needed a real one.
