Mamanyt1953 Mamanyt1953 There are threads for all kinds of Recipe categories in the Foodies Section. Each category starts our with Recipes and then the category for that recipe. (Recipes - Cookies, for example, or Recipes - Soups, Stews, and Sauces). Go check them out....lots of good recipes in those threads!

Beef stew tonight. I took a hunk of chuck roast out of the freezer yesterday and stuck it in the fridge to thaw. I have some potatoes that need to be used up and I have plenty of carrots in the fridge. Peas in the freezer. I'll just do a braised stew in the oven this afternoon; it's a nice way to warm the kitchen up, too. Maybe some apple crisp for dessert. With vanilla bean ice cream.

here's the recipe i use -- Bundt Dutch Apple Cake Recipe

the only changes i make are to use applesauce instead of oil (the same amount), and i don't always have orange juice on hand so will make some Tang to use in the recipe instead.



tonight i'll have a stuffed pepper half, some baby carrots with blue cheese salad dressing as a dip, and an apple. later in the evening, i'll have dessert -- a slice of Dutch Apple Bundt Cake. :D

Looks as good as it sounds. Now I have an excuse to buy a Bundt pan. ;) I'm glad you mentioned using applesauce instead of oil, as that 1 cup of oil would have scared me away! I might do 1/4 cup oil and the rest applesauce, but would never make a cake recipe with 1 cup of oil !!! :eek:

Our beef stew was great yesterday. Nothing fancy. Just the beef, some tomatoes, red wine, potatoes, onions, garlic, potatoes, carrots, and peas. I make my own version of Emeril's Rustic Rub and I used that to season the beef before giving it a good browning.

We have leftovers and I'm going to make some popovers tonight. We'll ladle the stew over the popovers and dig in.

i do love making bundt cakes! i actually, just a few months ago, bought a second bundt cake pan. i've gotten into the habit of making good use of the range oven when baking in it, so i wanted to bake two bundt cakes in the oven (at the same time). i slice both cakes, then wrap and freeze what i'm not keeping out to eat (over the course of several days). i prefer the Wilton brand nonstick bundt cake pans. they're of a good weight, they bake evenly in my experience, the nonstick coating hasn't worn down or off, and they're reasonably priced. i bought mine at walmart online.

yes, 1 cup of oil is way too much oil! :agree: i use applesauce very often instead of oil in baked goods. it's not so much that it's healthier (though that's good too), but that the baked items turn out more moist and not oily tasting (like the Dutch Apple Bundt Cake might well have, with 1 cup of oil in it).



i'll heat up a spanish rice (w/ground turkey) stuffed pepper half -- those turned out very good btw, some baby carrots with blue cheese salad dressing as dip, and a sliced apple. a slice of Dutch Apple Bundt Cake for dessert, later in the evening. :D

I've changed my name to "Sir Loin-a-Lot." We found two beautiful sirloin steaks in the back of the freezer. Talk about luck.
They're huge so we'll thaw partially, cook up one, and split it and save the other for another time.
We've been having a little bit too much fun with the idea of a "ten vegetable salad." I saw it somewhere and the challenge is making a salad with 10 vegetables (or technically fruits) in it, so now we've got 3 kinds of greens, some parsley, shredded zucchini, shredded carrots, two kinds of peppers, cucumber, and tomato.

Dear Richard asked me to make tuna and noodles tonight. We love our tuna and noodles because it doesn't call for the dreaded cream of mushroom soup. Instead I saute fresh mushrooms and throw them into the mix. And I make a bit of cheese sauce instead of using the soup. He has always hated tuna and noodles (we are not fans of cream of.....anything), but he loves this stuff.

I like to make layered salads: 7 layers, 10 layers, etc. Then top them off with a "frosting" of home made dressing. I brought one into work one time for a picnic and even people who don't normally like salads told me how good it was. A variety of lettuces, chopped onion, chopped celery, broccoli, cauliflower, carrots, tomatoes, radishes, red and green peppers, cucumbers, etc. Whatever I have in the fridge. But then I usually sprinkle chopped bacon over the salad. Frost with the dressing, then add a sprinkling of a couple kinds of cheeses. Yum.

Hi y'all! I've had some crummy mold allergies lately and haven't "tasted" much of what I've eaten, my head's been so stuffed up.

Also, after cleaning out the pantry a couple weekends ago, there were some canned soups and things that needed to be eaten before cooking much more from scratch.

So....I've been sort of snacking on fruits, veggies, nuts, cheeses, peanut butter, etc and the old pantry and frozen leftover items.

Today was my first real cooking in over a week. Just pot roast, veggies, onions and mashed potatoes. Fall/Winter food time is here!

I don't know. I'm mulling over trying to talk Dear Richard into going out for dinner tonight. I'm kind of in the mood for Chinese and we still haven't gone there.
We had Chinese last night. I had Tofu and fried vegetables and my friend had sweet and sour pork. I gave her some of my tofu and she really enjoyed it. She said she was going to get what I had next time we go for Chinese.

We made a very simple thing a few days ago. Pork and Beef meatballs with spices and seasonings, baked, and then fried up cubed potatoes and onions. The meatballs were cut up and seared a little with the potatoes and onions and as boring as it sounds, it was fantastic.
So today I moved it along to the test phase. The meatballs were under cooked on the inside and I burned the damn potatoes. :bawling2:
I'll try again later.

i'll be heating up a serving of ham and scalloped potatoes shortly, and have a sliced apple. a late dinner, but then i had a very late lunch. i'll have a banana walnut blondie for dessert, probably when i give my three cats their 'middle of the night snack'. :D

All the dogs/cats had chicken tonight, wings, backs, necks, boneless stuff and some liver.

On the subject of the fried potatoes, I'm not going anywhere near a potato for awhile. It took me 20 minutes to scrub that stupid skillet.
