LOL, I was just going to say to rubysmama rubysmama , "Don't move to Hawaii, it's a staple there (Spam, not tofu)"! I'm not in love with the stuff, but I can take it in small doses. I have a friend who makes a killer omelet with all kinds of veggies and tiny chunks of Spam.
Hawaii sounds so beautiful. Too bad about about their Spam obsession. :lol:

Nothing planned for dinner tonight. Not even hungry. Guess I'll just have something light and snacky.

LOL, AGAIN! You put your beans on to soak right as I was headed to bed! I'm a night person.

Tonight...um...I dunno. Nothing that needs thawing, which slims down the selection. Maybe Ramen noodles with mixed veggies and some finely chopped left-over chicken thrown in.

I love Ramen noodles cooked with veggies or just by itself.

Yesterday I picked up a couple smoked pork hocks and some cans of stout. The pork hocks are simmering now, and tonight I will soak the beans. Tomorrow a nice big pot of baked beans.
After simmering in a low oven for 11 hours, the beans were done. They don't look like much, but they do taste wonderfully deep and rich.

Do you have a slow cooker? I've started doing my vegetarian baked beans in my slow cooker to save energy costs of having the oven on all day. Beans and rice don't work well in a slow cooker, as the rice gets goopy, but simple baked beans do.

Do you have a slow cooker? I've started doing my vegetarian baked beans in my slow cooker to save energy costs of having the oven on all day. Beans and rice don't work well in a slow cooker, as the rice gets goopy, but simple baked beans do.
A short soak with a little soap and it will clean easily. If I want it shiny and pristine, I soak it for a few days with a couple tablespoons of bleach. I have an Instant Pot, which is new to me. I should try it with beans, but as a curmudgeon, I have some hesitancy making changes to something that works so well for me. Thanks for the point on power consumption, it should push me over the edge.

I should have reserved some of the pork bone stock I made for yesterday's beans. My beans also came out delicious but I had way too much "pot liquor" for the amount of beans.

Tonight, I think I'm going to use that extra pot juice to make some type of soup. I just haven't figured out what's going in it yet. I used some Mexican spices in the pork broth and beans, so maybe a chicken tortilla soup would work.

I pulled a bag of pre-cooked gemelli pasta out of the freezer before work this morning. Probably going to roast some chicken breast, cauliflower, garlic and toss the pasta in a buttery roasted garlic-lemon sauce. As long as I'm roasting garlic, might at well make some garlic toast. Dragon-breath dinner!

Those beans looked pretty darn good!

I dearly love French onion soup!

Dear Richard was in charge of dinner last night; he threw a pizza into the oven. Worked for me.

Tonight is spaghetti; I took some pasta sauce from the freezer last night.

This was supposed to be "What's for Dinner" last night, but I went to happy hour and didn't cook dinner. So yesterday's failed plan became "What's for Dinner" today.

Breaded baked chicken thigh, roasted cauliflower and carrots, garlic-lemon-parmesan-butter pasta, and toasted French garlic bread.

The pasta looks rather plain, but it's got a zingy fresh lemony brightness.
