LOL, micknsnicks2mom micknsnicks2mom , I DO THAT TOO!!! Sauce over bread! Some days, I just don't want to bother, and it is quick, easy, and tasty! AND I've thawed sauce for tonight...We'll see if I feel like boiling pasta or not when the time comes.
you know, i thought of you, when i just didn't have anything left in me that day to cook the pasta. i remembered that you sometimes will have just the spaghetti sauce for your meal. and i thought, put it over bread and call it 'good'. :D



yesterday i did cook the pasta, made enough to mix into all the meat sauce (that i have left in the fridge). so for tonight's dinner, i'll heat up in the microwave some pasta with meat sauce, and top with a little grated parmesan cheese. a slice of bread with margarine, to go with it.

Yesterday I picked up a couple smoked pork hocks and some cans of stout. The pork hocks are simmering now, and tonight I will soak the beans. Tomorrow a nice big pot of baked beans. The weather forecast calls for a weekend of wet snow and rain. With weather like this, there is nothing like a slow pot of beans baking, a good book, great music, and a cat to cuddle.

I always boil a whole pound of pasta at one go, toss in oil, then put 2-servings each in bags in the freezer.
HUH. Something else I didn't know you could freeze! My life just keeps getting easier and easier thanks to y'all!

Fried vegetables and tofu.

Tonight...Dunno. I'm considering scrambled eggs and biscuits, but there are several options.

I'm trying to get back into the habit of cooking regularly. So tonight I made the old vegetarian standby, rice and beans.
Red Kidney beans, with onion, garlic and celery. I cooked the rice with part orange juice, then added a touch of balsamic vinegar and soy sauce. Extra servings will go in the freezer for a night I don't feel like cooking. :yummy:

Well, since I HATED SPAM when I ate meat, maybe that explains why I didn't like Tofu. :lol:

Yeah, just cook it al dente and drizzle a little oil or butter before freezing so it doesn't stick together when you want to defrost and heat.

Dinner tonight is the last of my leftover pasta and pizza sauce with meatballs.

A little orange flavor on rice sounds yummy, especially with the Asian flare with vinegar and soy!

I'm making stock today to make a pot of beans tomorrow. That's something else I always need frozen jars of...precooked beans and tubs of cooked rice. Beans and rice was my lunch today at work!

I'm making stock today to make a pot of beans tomorrow. That's something else I always need frozen jars of...precooked beans and tubs of cooked rice. Beans and rice was my lunch today at work!
I've cooked dry beans before and froze them, but I find the canned ones more convenient. And I was lazy and used Minute Rice. :eek:

That's OK. People in Hawaii love spam. I don't remember what it taste like. I'm glad you like it. A lot of meat eaters don't. I like it but can only take so much of it at a time. It's the other white meat.

I did a stupid thing by making a late lunch and now it's almost time for bed and I'm not hungry for dinner yet (lunch was eggs in butter, raw milk and a salad full of cheese, olives, and flax oil, so there's why I'm not hungry, LOL).
I don't know why I do this stupid stuff. When I do this and eat dinner I feel weighed down all night and don't sleep well, but when I skip dinner I wake up ravenous.
Bah.

Oh my gosh, that's my life. Snow, slow simmering food, books, music, and cuddly pets.
There is a bit of heaven on earth after all.
We get snow for most of the year and...I don't hate it.

I wish I could get raw milk here easily. When I worked from home, I was in a milk-buying "club" where everyone pre-ordered, then on delivery day we'd have to sit around for an email that the milk was at the host's house. We had about 30-45 minutes to go pick up our order. I felt like I was buying illegal drugs or something. Just for the love of raw milk!

Technically, consumers of raw milk are supposed to drive individually to a raw dairy farm and only buy for their own use (not pick up any for others). Crazy laws. The closest raw dairy farms are 3 hours drive round trip.

When I had to take an office job out of the house, my milk-drug days came to a sad end.

The laws are kind of weird, but at the risk of hijacking another thread (some day this old fart will get with the whippersnappers and learn this internet thing, I swear) milk is a huge part of my life. I get the idea that "in nature, we wouldn't drink the milk of other animals so milk is bad for us" thing, but so long as I'm OK with instant foods and frozen foods and canned goods that wouldn't exist in nature, I'll drink up =D

Plus, all but 2 of my cats really love a sample of the cream a few times a month. My 9 year old always manages to get a huge glob on his nose, then stare at me like "WAT" with this blob of white on his face.

Great minds think alike! :thumbsup: I made a rice bowl tonight, it's my own concoction - brown rice with broccoli, garbanzo and black beans, green onions and diced tomatoes.
That sounds good. I often find a recipe online with some of the ingredients I have on hand, then make it work. I have some broccoli, but oddly have never had it with legumes.

In fact, I have a baggie of spaghettini defrosting right now, so I can use up the rest of the pizza sauce from earlier in the week. Pasta with pre-made frozen meatballs and toasted garlic bread is "what's for dinner".

Sounds like lots of us are going Italiano this evening.

If I can get anywhere near the grocery store, I will be picking up some stuff for a salad.. just feel as if I need one.. and I have some leftover small slices of spinach/garlic pizza..
The crust was too thick for me.. too bready for pizza.

LOL, I was just going to say to rubysmama rubysmama , "Don't move to Hawaii, it's a staple there (Spam, not tofu)"! I'm not in love with the stuff, but I can take it in small doses. I have a friend who makes a killer omelet with all kinds of veggies and tiny chunks of Spam.

I put beans in soak water at 5 this morning.
LOL, AGAIN! You put your beans on to soak right as I was headed to bed! I'm a night person.

Tonight...um...I dunno. Nothing that needs thawing, which slims down the selection. Maybe Ramen noodles with mixed veggies and some finely chopped left-over chicken thrown in.
